Cooking with Fresh Herbs: Dill

It's another installment in my series about Cooking With Fresh Herbs, and this time I'm focusing on dill, something I'm rediscovering in my own garden after forgetting to grow it two years in a row! If your only exposure to dill has been in pickles, now's the perfect time to try it because fresh dill goes well with so many foods that are appealing in hot weather.

Dill is relatively easy to grow, although it grows best where there's plenty of sun. Lots of nurseries will sell dill plants, but it's also easy to start from seeds, and if you let your dill plant go to seed at the end of the summer, the plant will very cooperatively drop the seeds and grow new dill for you in that spot the following year. Wikipedia points out that the dill plant is used three ways in cooking, with the dried leaves being called dill weed, and the seeds called dill seed. Recipes in this collection are for using the thin, delicate leaves which we call fresh dill.

When using fresh dill, discard the thicker parts of the stems, breaking or snipping off the thinner stems with leaves attached. Each spot where you snip some dill from the plant will form two branches, so like most herbs, using the dill often will produce a bushier plant. Now here are some ideas for using dill with fish or seafood, vegetables, soups, baking, and some dill combinations you may have never heard of before.

By the end of the summer, I hope to have written about quite a few more of the herbs in my garden including rosemary, chives, thyme, oregano, sage, and of course basil! Maybe even a few more unusual ones like marjoram and summer savory.

Anybody have request for other things I haven't mentioned, just leave a comment. I'd love to learn more about an herb I haven't used much.

I'm really loving my fresh dill this year (why oh why did I forget about planting it for two years?) That sounds like a fabulous recipe for potato salad. I also love the sound of dill with hearts of palm, yum!

Fresh dill is a joy. I love it chopped into scrambled eggs, in salads,as a hefty garnish with smoked salmon or herring in sour cream, on cold carrot soup, or, my favorite -- in my Auntie Stella's potato salad (potatoes, equal parts sour cream and mayo, onion, eggs, lots and lots of diced cucumbers, salt, pepper, celery seed and handfuls of chopped dill. YUM!!) It is also great in a cooked beet and hearts of palm salad with diced red onions and mandarin oranges.

I don't know but that would be my guess. Or maybe you need to trim the ends so the plant branches out more. When it gets to be midsummer here, I start to watch my herb plants and trim off any sign of seeds. That seems to keep the plant producing leaves for a bit longer.

I have two dill plants and right now I've trimmed off so much there are hardly any leaves left. I'll have to be patient for a few weeks before I can cook with dill again.

BTW everyone, I made Sue's Mashed Cauliflower with Dill recipe (link in the post) yesterday right after I wrote this post and it was great. I didn't have Colby cheese so I used a blend of cheeses. Loved it!

Every year I plant three dill plants in the garden. Every year they grow to 6-8 inches tall. Every year they go to seed. Every year I mourn.... and then buy beautiful bunches of dill from the local farmstand. I love dill, but it certainly does not love my garden!
