Last week I shared Lots of Great Ideas for Celebrating Halloween, and I promised I'd be back with pumpkin recipes. There are an endless number of tasty things that can be made with this autumn vegetable, so if your pumpkin recipe collection is pretty much limited to Jack-O-Lanterns or pumpkin pie, here are some great ideas to get you started. What's a Pumpkin?
In many parts of the world, all types of winter squashes are called pumpkins. But for these recipes, I'm referring to the type of orange-skinned squash traditionally used at Halloween. Both the pumpkin itself and the pumpkin seeds are highly nutritious.
