A Month of Side Dishes: Corn Bread Muffins (With Gluten-Free Variation)

It seems like everyone has a recipe for corn bread. I've tried exotic versions with things like jalapenos, cheese, and even ham but I still prefer the basic corn bread all by itself. So, my recipe calls for a few understated indulgences that still allow the corn bread to star! Ingredients like freshly ground black pepper, light grey celtic sea salt , and raw honey are especially essential in the gluten free, dairy free version.

Ingredients

  • 1/2 cup softened butter
  • 2/3 cup natural sugar
  • 1/4 cup raw honey
  • 1/2 tsp light grey celtic sea salt (or substitute your favorite)
  • 1 tsp freshly ground black pepper
  • 1 1/2 cups all-purpose flour
  • 3/4 cup cornmeal
  • 1/2 tsp baking powder
  • 2 eggs
  • 1/2 cup evaporated milk (can milk)
  • 3/4 cup fresh or frozen corn kernals (thaw frozen kernals)

 

Ingredients for Gluten/Dairy Free Version

  • 1/2 cup canola oil or coconut oil
  • 2/3 cup natural sugar (less refined)
  • 1/4 cup raw honey
  • 2 eggs
  • 1/2 tsp light grey celtic sea salt (or substitute your favorite)
  • 1 tsp freshly ground black pepper
  • 1 1/2 cups gluten free brown rice flour
  • 3/4 cups gluten free corn meal
  • 1/2 tsp baking powder
  • 1/2 cup Westsoy original soymilk
  • 3/4 cup fresh or frozen corn kernals (thaw frozen kernals)

Directions

Preheat oven to 400 degrees F. Line 12 muffin cups or grease a muffin pan with butter or oil. In a large bowl, mix together butter/oil, sugar, honey, eggs, pepper, and salt. Add the flour, cornmeal and baking powder and contine mixing until well blended.

Stir in the milk and corn. Transfer batter to prepared muffin cups, using a wooden or table spoon. Bake in preheated oven for 20 to 25 minutes, or until a toothpick inserted into center of a muffin comes out clean.
