Creme Fraiche Lemon Pie

About a month ago I learned how to make homemade creme fraiche. It is so ridiculously easy. From what I have read it is very expensive. But I must admit I have never even seen it in a store here. It is the French version of sour cream and can be used in sweet or savory dishes.
I've been on creme fraiche kick ever since I made my first batch. I decided I like it much better in desserts. So I have been coming up with recipes to use it in. The first was the Creme Fraiche Cream Cheese Frosting for my Vegan Dark Chocolate Triple Layer Cake.
The most recent is the Creme Fraiche Lemon Pie that was suppose to be for dessert on the 4th of July but my day was out of wack and I never had a chance to bake the crust.
Left over filling made it's way into some half pint mason jars. A great way to take dessert on the go.
