 <description>&lt;p&gt;I just did a crockpot squash today (in prep for tomorrow =)) I peeled and diced butternut squash added a little chicken stock, thyme, tabasco and nutmeg.  It&#039;s so yummy, even my husband (&quot;I only eat meat&quot; guy) raved over it!!!  Squash, the other orange veggie...&lt;/p&gt;

 <title>Baked winter vegetables my new cooking staple</title>

 <description>&lt;p&gt;Since going vegan one of my favorite dinner is to bake winter veggies tossed in olive oil, salt, pepper, garlic and cinnamon (the key ingredient.) While they&#039;re baking I whip up a mushroom gravy using nutritional yeast, soy flour, oil, tamari and rice milk, combined with sauteed portabella mushrooms.&lt;/p&gt;
&lt;p&gt;I&#039;ve baked combinations of: golden potatoes, acorn squash, butternut, yam, even brussels sprouts.&lt;/p&gt;
&lt;p&gt;My non-veg*n S.O. and I love it!&lt;/p&gt;

 <title>Squash by any other name</title>

 <description>&lt;p&gt;It&#039;s fun seeing I&#039;m not the only squash lover around.  Roberta, no idea where the name comes from but it&#039;s worth mentioning that it&#039;s often called &quot;pumpkin&quot; in other countries.  For example, I have a great sounding recipe I&#039;m going to try from The Silver Spoon, a famous Italian cookbook, but I almost didn&#039;t spot it because it was listed under pumpkin.  (I love butternut squash but am barely lukewarm about what Americans call pumpkin, go figure.) &lt;/p&gt;

 <title>Recipe? Hmmmm....</title>

 <description>&lt;p&gt;There wasn&#039;t one. I&#039;m one of THOSE people. &lt;/p&gt;
&lt;p&gt;BUT.&lt;/p&gt;
&lt;p&gt;I baked the squash whole first, because they&#039;re easier to cut that way. While the squash was baking, I toasted the pumpkin seeds in the hot oven until they were brown. Tip: Do not walk away and check email, because then, the seeds will be TOO brown. Stay right there. &lt;/p&gt;
&lt;p&gt;I cooked the quinoa in some stock. When it was done, I mixed in the chopped spinach (I had frozen, it would be better with fresh), some olive oil, the pumpkin seeds, black pepper, salt, a little bit of curry powder and some cayenne. I like a little kick. This would be good with some parm or feta, but I&#039;m on a vegan kick right now. &lt;/p&gt;
&lt;p&gt;Then, I cut my cooked squash in half, scooped out the seeds, and filled it with the stuffing. That was it. The leftovers microwaved quite well, too. &lt;/p&gt;
