 <description>&lt;p&gt;Jim, I&#039;d have to say that Alton Brown&#039;s version sounds pretty darn good.  It&#039;s a bit similar to how I usually make it, ingredient wise.  Ok, except I use Dreamfield&#039;s Low Carb Pasta, (which is completely awesome) and maybe a little less butter.&lt;/p&gt;

 <title>Goatie mac goodness</title>

&lt;p&gt;A note on the cheese: A while back, when I insisted I was absolutely sick to death of bad soy cheese pizza, we searched high and low for a real cheese I could eat that would actually &lt;i&gt;melt&lt;/i&gt;.  That&#039;s when we discovered Kasseri.  (Here&#039;s the original &lt;a href=&quot;http://www.belly-timber.com/2005/11/01/pizza/&quot;&gt;pizza post&lt;/a&gt; from our archives.) Dave (my chef husband) says Manchego would work too, but Kasseri melts better.  :-)&lt;/p&gt;

 <description>&lt;p&gt;With a cow&#039;s milk allergy, I&#039;ve almost given up on mac and cheese.  I have heard that a good Manchego can be used, but haven&#039;t tried it yet (it&#039;s on my To-Do list, though). And now there&#039;s a goatie mac version complete with Star Trek references... I&#039;m in bloggy mac heaven!!&lt;/p&gt;
