Very interesting to hear about gluten-free, casein-free cooking as part of the treatment for autism. I didn't realize that. Thanks for the info.

Gluten-free and autism

Lots of parents of children with autism are using a gluten-free, casein-free (GFCF) diet as part of their treatment approach. In many, many cases, the diet helps these children tremendously. With the widespread occurence of celiac disease and the thousands of parents choosing a GFCF lifestyle for the sake of their autistic children, there is a HUGE demand out there for more gluten-free foods, recipes, and blogs!

We've been GFCF (and soy-free too) for 3 months now, and I started my own blog to share the recipes I've come up with (and I am in NO way a cook but am quickly learning my way around the kitchen!)

www.gfcfblog.blogspot.com

and at this point, no one can tell they are Gluten Free. :) It's pretty easy to make fabulous gf brownies that taste amazing, not just good in a "health food store kind of way"!

I have Celiac Disease too

My kids and I have celiac disease, and my recipe site is filled with Gluten free and dairy free recipes.

It is becoming more diagnosed, so people don't look at me like I'm nuts every time I ask about ingredients!

Karina, love the slogan

FDC, interesting idea to use garbanzo bean flour in a dessert. Very healthy I'd imagine. Falafel brownies! I love garbanzos so I bet I'd like it.

Karina, just in my little school there are two people who are sensitive to Gluten. Whenever we have a faculty dinner they have to remind everyone every time it seems. No one seems to get it, so it's great that awareness is increasing.

Gluten-free is the new black

Thanks, Kalyn! [and Elise, too] for the focus on gluten-free cooking and baking. Celiac disease is now reported to be present in up to 1% of the US population, ten times higher than previous estimates. Gluten intolerance awareness is spreading faster than you can say blueberry pancakes. The gluten-free lifestyle is here to stay.

After living gluten-free for five years, all I can say is, It's about time! Bring on the recipes!

Eat well, be well, and make every day delicious.

I made a pan of brownies the

I made a pan of brownies the other day with a mixture of rice and garbonzo bean flours. As unappetizing as that sounds, they came out nicely: a little grittier than your average brownie, but still good in a health food store kind of way.

Blogs can Help with Gluten-Free Cooking and Baking

[img_assist|fid=2847|thumb=1|alt=Flourless Chocolate Cake]

Photo and Recipe for Flourless Chocolate Cake from Karina at Gluten Free Goddess.

As tempting as this gluten-free chocolate cake may look, there's no doubt that gluten-free baking can be challenging. After all, it's the gluten that gives dough it's elasticity and allows it to be leavened. Luckily, for the 1 in 133 people suffering from Celiac Disease, also known as gluten intolerance, a large number of food blogs are providing a network of helpful resources for gluten-free cooking and baking.

Karina from Gluten Free Goddess has a very thorough list of suggestions for Cooking and Baking Gluten Free. Karina has also written about Gluten-Free bread in a bread machine, a taste test for the best gluten-free brownie mix, and her Top Ten Gluten Free Products.

At Gluten Free Girl, Shauna has a long list of resources for Gluten Free cooking, plus tempting recipes. She's currently writing a narrative cookbook about her experiences learning to cook gluten-free.

Brendon from Something in Season writes a blog where all recipes are gluten-free, not for him, but for the sake of his wife who can't eat wheat or gluten. Besides being gluten-free, Brendon's recipes focus on fresh, seasonal ingredients.

Gluten-Free by the Bay has a good list of other Gluten-Free blogs and recipe exchanges, and regularly posts a semi-weekly roundup of gluten free recipes.

Here are more gluten free blogs. (Hat tip to Elise for this list. I had been saving links for a post on gluten-free baking, but discovered these last six blogs, all new to me, from Simply Recipe's recent spotlight on Gluten Free Food Blogs. The spotlight includes a custom search engine Elise created which can be used to search gluten-free blogs.)
