This is part three of a series focusing on interesting ways to cook zucchini, designed to bring a smile to the face of veggie gardeners who are overwhelmed with the lovely courgettes. So far we've covered Zucchini Carpaccio and Fried Zucchini Variations, and we're saving zucchini bread and cake for last, so today let's see some of the many and varied ways food bloggers show their love for cooked zucchini.

I found wonderful zucchini recipes everywhere, on new blogs as well as on some of my favorites. There are certainly a lot more zucchini recipes out there, but here is a collection of more than thirty interesting ones. If you have a great zucchini recipe that should be part of this collection, leave a link or your recipe in the comments.

The lovely baby zucchini in the photo are from a post called Brown Butter Zucchini on Vegan Visitor, and yes, I did notice that it said butter on a vegan blog, and the actual recipe actually used margarine. But whether you use butter or margarine, this photo perfectly illustrates one thing that lots of food lovers realize about zucchini: the tiny baby squash have wonderful flavor.

At Tummy Treasure, I loved the sound of Cornmeal Crusted Roasted Zucchini Tart.

Susan at Fat Free Vegan Kitchen makes Shitake, Sweet Potato, and Zucchini Foo Yung. She also combines zucchini and mushrooms in a lovely dish of Gnocchi with Zucchini Ribbons and Portabella Mushrooms.

This next dish sounded so great, another food blogger has already recreated it. First Karina of Karina's Kitchen made Pesto Zucchini Tomato Gratin. When Emily of Superspark saw how good this looked on Karina's blog, she made her own variation of Summer Squash Tomato Pesto Gratin. (And if anyone who's not a food blogger is wondering if we mind when other bloggers do a spin-off on one of our recipes, the answer is absolutely not! Seeing how great recipes make the rounds is one of the fun things about reading food blogs.)

How quickly can you say Zucchini Ricotta Frittata? That's one of the great zucchini dishes I found on Simply Recipes, along with a simple but delicious-looking Zucchini with Thyme and Stuffed Zucchini with Ham and Mushrooms.

At 101 Cookbooks, Heidi creates a big bowl full of good flavor with her recipe for Quinoa and Grilled Zucchini.

You could expect to find zucchini recipes galore at A Veggie Venture, and there are plenty of them in the Alphabet of Vegetables. I especially loved the sound of Feta Stuffed Zucchini, Roasted Zucchini with Lemons, and Zucchini with Tomatoes and Cheddar.

At What Did You Eat, I'd like to taste Linguini with Zucchini, Capers, Lemon, Pine Nuts, and Herbs. Another great zucchini-pasta combo is Sher's Spagetti with Zucchini and Saffron. And more pasta, how about Gnocchi with Lemon Ricotta and Zucchini from Vegalicious, or Zucchini Carbonara from Closet Cooking?

Grilled Zucchini and Rice Casserole is a recipe I found on Cara's Cravings, a blog that was brand new to me.

Are you drooling yet? How about Spicy Tofu and Zucchini with Lemongrass, Lime, and Basil at Cookthink?

A classic Italian preparation is the Roast Zucchini from Exploring the Silver Spoon.

The Paupered Chef has Zucchini with Fregola and Pine Nuts.

At One Hot Stove, Nupur recently completed the A to Z of Indian Vegetables, and her post on Z for Zucchini Kofta Curry has not only her recipe for that great-sounding dish, but also a collection of other great Indian recipes using zucchini. At the end of this post you'll find links to the whole A to Z of Indian Vegetables collection of posts, a "must bookmark" for Indian food lovers.

Cold soup can be good when the weather is hot, and Zucchini Gazpacho sounds wonderful at Je Mange la Ville. Another cold zucchini soup that also sounds great is the Zucchini Vichyssoise from The Culinary Chase.

Janet is Hungry was so jealous of Zucchini Rolls with Smoked Salmon Cream Cheese (also from The Culinary Chase) that she made her own Zucchini Rolls with Salmon and Cream Cheese. Both versions look just amazing.

What's Cooking in the Orange Kitchen has a classic version of Zucchini Lasagna that sounds delicious.

Zucchini is truly international, and two delicious dishes from Turkey are Zucchini with Rice and Zucchini with Tomatoes from Almost Turkish Recipes.

When the weather is getting cold, but there is still zucchini in the garden, consider zucchini soup. A charming presentation if you have those little round zucchini is the Zucchini Veloute from Cook (almost) Anything At Least Once, served inside a hollowed-out zucchini bowl.

Another yummy-sounding soup variation is Creamy Zucchini Soup with Fresh Oregano and Lemon from Lucullian Delights. And nothing could look more delicious than Ilva's Zucchini Parcels with Herb-Infused Mozarella.

And finally, I would not be able to resist the Warm Stuffed Zucchini Cups from Thyme for
Cooking.

Blogher Food Editor Kalyn Denny shares her own zucchini recipes on her blog Kalyn's Kitchen, including favorites like Grilled Zucchini, Sauteed Zucchini with Spinach and Basil Pesto, and her latest zucchini recipe for Roasted Baby Summer Squash with Feta and Thyme.
