 <description>&lt;p&gt;My children&#039;s favorite Feel Good Meal hands down is Kraft Macaroni and Cheese!  I could spend the time to make homemade macaroni and cheese, which my husband would absolutely love, but the kids would prefer the Kraft!!  My children literally beg me to make this for them, even in the summer when it is 90 degrees outside, so what does that say, LOL!  Okay, now I am getting a craving for some, gotta go and make some mac and cheese, bye!&lt;/p&gt;

&lt;p&gt;1 (7.6 oz.) package potato flakes&lt;/p&gt;
&lt;p&gt;2 pounds lean ground beef&lt;/p&gt;
&lt;p&gt;1 onion, finely diced&lt;/p&gt;
&lt;p&gt;1 (15 oz.) can whole kernel corn, drained&lt;/p&gt;
&lt;p&gt;1 (15 oz.) can green beans, drained&lt;/p&gt;
&lt;p&gt;4 (10.5 oz.) cans brown gravy&lt;/p&gt;
&lt;p&gt;Salt and pepper to taste&lt;/p&gt;
&lt;p&gt;1/4 pound American cheese slices&lt;/p&gt;
&lt;p&gt;Directions&lt;/p&gt;
&lt;p&gt;Preheat oven to 350 degrees.&lt;/p&gt;
&lt;p&gt;Prepare potatoes according to directions on box. Set aside.&lt;/p&gt;
&lt;p&gt;In&lt;br /&gt;
a large skillet, sauté ground beef over medium heat for 1 minute. Add&lt;br /&gt;
onion to skillet and continue to cook until beef is no longer pink and&lt;br /&gt;
onion is beginning to brown. Drain off some of the grease.&lt;/p&gt;
&lt;p&gt;Add&lt;br /&gt;
corn, green beans and gravy to the skillet. Mix thoroughly. Add salt&lt;br /&gt;
and pepper to taste. Pour mixture into a 9x13-inch baking dish. Spread&lt;br /&gt;
potatoes over the top. Layer cheese slices over potatoes.&lt;/p&gt;
&lt;p&gt;Bake for 40 minutes, or until cheese turns golden brown
&lt;/p&gt;&lt;p&gt;&amp;nbsp;&lt;/p&gt;

We Southerners believe that most problems in life can be solved if you will simply show up with a full 13x9-inch Pyrex dish covered in aluminum foil. &lt;/p&gt;
&lt;p&gt;Thankfully, I have passed on this love to my children, and most of our favorite family recipes are of the casserole variety.  My kids&#039; very favorite (and mine too) is Ham and Hashbrown Bake.  It&#039;s the ultimate Southern comfort food:  meat and potatoes!&lt;/p&gt;
&lt;p&gt;Ingredients:&lt;br /&gt;1 lg. bag frozen hashbrowns (approx 2 lbs)&lt;br /&gt;2 cans cream of mushroom soup&lt;br /&gt;2 ½ cups grated cheddar cheese, divided&lt;br /&gt;1 8-oz carton of sour cream&lt;br /&gt;2 cups diced ham&lt;/p&gt;
&lt;p&gt;Mix all ingredients together, reserving 1 cup of cheese to the side.  Pour into greased 13x9 inch casserole dish; cover with remaining cheese.  Bake at 350 for 90 minutes.  Serves 12.&lt;/p&gt;
&lt;p&gt;This dish is tasty, and it&#039;s practical, too.  Though I usually serve it at dinnertime, the ingredients lend themselves to brunch, too.  It can be easily made in large batches, and it freezes well.  And with grocery prices climbing up, it&#039;s nice having a recipe that uses ham -- generally a less-expensive meat than beef or chicken.  Best of all, every member of my kids love it (even the picky ones), and since this recipe makes such a large batch, there are plenty of snacky leftovers for a couple of days.&lt;/p&gt;

&lt;p&gt;And yes, there are times when I miss my pre-child, day-long cooking extravaganzas just a little bit. But I&#039;ve realized that as our family sits around the dinner table and eats the simple, delicious dishes that have been passed down through generations, we&#039;re not just connecting to each other - we&#039;re connecting to our extended family as well. &lt;/p&gt;
&lt;p&gt;Case in point: the other night our little guy took one bite of some cheese grits I&#039;d made from my mother&#039;s recipe, and he said, &amp;quot;Mama! This tastes just like I&#039;m at my grandmother&#039;s house!&amp;quot;&lt;/p&gt;
&lt;p&gt;And I grinned from ear to ear.&lt;/p&gt;

It&#039;s our favorite weekend breakfast or a hold over the troops until lunch-time snack.  It makes me feel good as a mom, because I&#039;m giving my boys something both healthy and delicious.  The boys like sipping through straws like big boys and taking turns sharing with mama and daddy. I like seeing their little milk mustaches and teethy smiles. We blend together whatever fresh fruits we have on hand along with milk, yogurt, and ice cubes.  Our recipe calls for sugar, but I omitted it to get the natural goodness from the fresh fruits, and honestly, it&#039;s sweet and satisfying without the added sweetener.  Here&#039;s a recipe I use that can easily be tweaked for your liking:
&lt;/p&gt;&lt;p&gt;&lt;i&gt;Quadruple the Smiles Smoothies&lt;/i&gt; (Makes About 4 Adult Servings)&lt;br /&gt;1 cup of Yogurt (I use Vanilla)&lt;br /&gt;1 cup of Milk&lt;br /&gt;A Handful of Fresh or Frozen Fruit&lt;br /&gt;2 Tablespoons of Sugar (I omit this)&lt;br /&gt;8-10 Ice Cubes &lt;/p&gt;
&lt;p&gt;Blend the first 4 ingredients in a blender and then add the ice cubes and pulse until well blended and smooth. Easy, Delicious, and Nutritious! &lt;/p&gt;
&lt;p&gt;You really can choose between a variety of fruit flavors (Bananas, Strawberries, Blueberries, Peaches, Raspberry, etc.) and combinations to get your favorite concoction. Our favorite so far has been Blue-Strawberry.  They are also easy for on the run or in the car.  A much healthier and satisfying alternative to drive-thu. I think it&#039;s important to eat together as a family. Where else but the dinner table, can you hear your son burp his ABCs, hear your daughter tell a 20 minute story about a shoe, or tell your son to take the peas out of his nose?&lt;/p&gt;&lt;/blockquote&gt;
&lt;blockquote&gt;&lt;p&gt;Although I think it&#039;s important to eat together as a family, I often times forget to take something out to thaw in time for dinner. Many evenings I find myself driving the kids here and there, leaving me with very little time to cook. And sometimes I just don&#039;t feel like cooking anything. Those are the nights we have breakfast for dinner. My kids love breakfast for dinner because hey, it&#039;s breakfast for dinner! I love breakfast for dinner because it&#039;s quick and easy and it&#039;s something the kids can help me with.&lt;/p&gt;
&lt;p&gt;I put a couple of the kids on egg-cracking duty. Sure, sometimes the scrambled eggs are a little um, crunchy, but it&#039;s ok. We just throw some cheese in there and everyone forgets about the shell particles. Another couple kids are on pancake duty. They measure out ingredients and mix up the pancakes. My oldest daughter always insists on the pancake flipping job. We haven&#039;t had too many flapjacks stuck to the ceiling yet, so it&#039;s all good. The little ones get to set the table, and I get the greasy bacon frying job.&lt;/p&gt;
&lt;p&gt;When we&#039;re all done cooking, we sit down and enjoy each other&#039;s company and the food we&#039;ve made as a team. &lt;p&gt;It can be quite a challenge to find a healthy-feel-good-meal to satisfy all four one-year-olds...but I have no fear as I reach for a box of Kraft Macaroni and Cheese.  Not only is it absolutely creamy and delicious-- but a sneaky mommy can hide all sorts of goodies in a bowl of Mac &#039;N Cheese: peas, carrots, ham, you name it! &lt;/p&gt;
&lt;p&gt;I enjoy getting creative at mealtimes and laughing as I watch the kiddies having fun with their food.  Ben likes to open his mouth as wide as humanly possible, and then flashes a BIG smile as he squishes the cheesy noodles between his teeth.  Savannah likes to take her food off of the spoon, examine it very carefully, and then ever-so-gently nibble at the chewy goodness.  Ethan enjoys taking his time and focuses all of his attention on each and every savory bite.  Andrew starts a chomping motion with his teeth as soon as he sees the spoon headed for his mouth.  I even catch Dad stealing a couple of bites here and there while we sit and feed the little loves.  &lt;/p&gt;
