Pancakes...

I am not sure if any of you have an "Eastern Market" but just the other day I saw a bag you can buy for Pumpkin Pancakes. So you all should check that out. But on the other hand let me tell making any type of pancakes is very easy. You can just add some canned pumpkin and even diced up pumpkin pieces if you want to get creative (if you opt for this its best if left overnight so they will not be hard). Pancakes are so easy to make for anything really...

Still Looking

I'm still looking for a really good pumpkin pancake recipe too. Thanks for the suggestions! I prefer summer to fall or winter, but I have to admit enjoying when pumpkin flavors come back.

I need to play with pumpkin pancakes

One of the B&Bs we stayed in this summer had pumpkin pancakes and I've been meaning to try to create a version ever since. I know that they made the batter the night before and left it in the fridge for the flavours to blend. And that they separated the eggs and beat the egg whites the next morning before adding them to the batter to help make the pancakes light and fluffy.

easy to make pumpkin pancakes

Must have been something in the air this morning because my husband suddenly had a craving for those pumpkin pancakes after I announced that I was cutting into the pumpernickel loaf..."Oh Ya! - Pumpkin Pancakes". Well it just so happened that I had mixed up a batch of pancakes for him but the plan was "strawberry pancakes". So he made a few w/ the chopped strawberries, then we added 2 1/2 tbs. of canned pumpkin to the batter. They came out great!. Here is the mix I used:

2 cup buttermilk pancake flour + 1 cup soy milk + 1/2 cup water + 1 egg + 1 tsp vanilla. I use the hand held mixer so the batter gets light. Put 1 to 2 tbs SMART BALANCE into pan to heat. When heater over med-hi heat, add batte. Once you see a few bubbles in batter, add your chopped strawberries (or other fruit) and if you want them thicker, add more batter at this time (it won't spread as much). If using pumpkin, simply add 2 1/2 tbs canned pumpkin to remaining batter (in this case there was about 3/4 c batter remaining).

Enjoy!

Pumpkin Pancakes

This morning, err afternoon actually because adult children do not get up at the crack of dawn unless they have to, we all walked the 1/2 mile from our house to Walker Brother's Pancake House, (This post is not mine, but it's a good Walker Brother's post so I'm linking it.)

It didn't dawn on me that they would have Pumpkin Pancakes and I didn't notice the little card on the table announcing the fact that "pumpkin pancakes are back" until after I'd already decided on the challah french toast. (And yes, someone did order the apple pancake.) Ah well, maybe next time. RJ did order them and everyone who tasted them said that they were very good. This led to the children asking TW to make her pumpkin pancakes again sometime soon. I would agree with that, TW makes a mean pumpkin pancake.

This would normally be the point in the post where I share TW's recipe for pumpkin pancakes but I can't, because I have no idea what it is or if she's blogged it. A quick search of her blogs brings me a whole lot of pumpkin recipes but nothing for pancakes. Maybe it's a secret recipe?

Plenty of other people have blogged pumpkin pancake recipes, thank goodness.
