 <description>&lt;p&gt;As a diabetic, I&#039;m always looking for ways to make dishes healthier.  I like replacing mashed potatoes with a &lt;a href=&quot;http://mrswskitchen.blogspot.com/2008/11/pureed-white-beans.html&quot;&gt;white bean puree&lt;/a&gt;, but when that just won&#039;t do, I mix white beans into the mashed potatoes--lightens the load for me and my husband doesn&#039;t always have to go without his taters.&lt;/p&gt;
&lt;p&gt;I, too, have my own version of Alfredo.  I don&#039;t use mozz or ricotta, either.  Just a creamy pamesan sauce, using olive oil, onions &amp;amp; garlic, parmesan cheese, skim milk and arrowroot powder as a thickener.  Delicious tossed with whole-grain pasta with lots of veggies!&lt;/p&gt;
&lt;p&gt;Lasagne can be easily remade with lower fat ricotta, skip the meat and layer in vegetables.  Better yet, layer your creation with zucchini and eggplant slices instead of noodles.  That&#039;s yummy, too. &lt;/p&gt;

 <description>&lt;p&gt;Yum.  Fettucine Alfredo is one of my favorite foods.  I&#039;ll have to give it a whirl with the calorie-friendly suggestions you made.   I&#039;ve also made it with low fat cream cheese, parm cheese, and skim milk combined and heated in the microwave.  Delish.&lt;/p&gt;

 <title>Substitute with whole grain pasta!</title>

 <description>&lt;p&gt;That&#039;s my easiest, simplest substitution for this and any pasta meal. There&#039;s pasta made of whole wheat, or brown rice, or quinoa, or kamut...so many healthy choices. I really like the Eden brand Kamut pasta. In fact I just did I post here, on how to make ho-hum tomato sauce into something that will make you healthy, happy and yummified!&lt;/p&gt;

 <description>&lt;p&gt;Any recipe you have can be made a bit healthier.  Let&#039;s use my &lt;a href=&quot;http://women4hope.wordpress.com/2007/02/01/catherines-world-famous-fettuccine-alfredo-recipe&quot; /&gt;World Famous Fettuccine Alfredo&lt;/a&gt; recipe as an example of how easy it can be.&lt;br /&gt;
If I&#039;m not mistaken, Fettuccine Alfredo is one of the worst foods you can eat for good health...But it&#039;s also yummy.&lt;/p&gt;
&lt;p&gt;How do you make the most unhealthy recipe healthy?  Start by replacing a few ingredients with lower calorie and lower fat ingredients...&lt;/p&gt;
&lt;p&gt;•	Replace mozzarella cheese with part-skim mozzarella.&lt;br /&gt;
•	Replace ricotta cheese with part-skim ricotta cheese.&lt;br /&gt;
•	Replace cream with skim or low-fat milk.&lt;/p&gt;
&lt;p&gt;For an even more healthy Fettuccine Alfredo, add some healthy food to it...&lt;/p&gt;
&lt;p&gt;•	Chicken&lt;br /&gt;
•	Shrimp&lt;br /&gt;
•	Broccoli&lt;br /&gt;
•	Spinach&lt;br /&gt;
•	&lt;a href=&quot;http://www.blogher.com/dont-forget-salt-pepper-and-flaxseed&quot;&gt;Flaxseed&lt;/a&gt;&lt;/p&gt;
