eggs IN the toast

poached eggs are the world's best food, hands down. and i love the simple "egg and cheese toast," but why not make it fancy!

check out my happy-eggs-in-a-heart!

i didn't post the recipe, but it's really easy.

just cut out the center of the bread and toast it in a well-oiled pan for a few minutes on both sides. put the cookie cutter back in the bread and crack an egg in the center. hold it there for a few seconds, then move the cutter to the other egg and repeat. flip the eggs and cook for a few seconds to minutes, depending on how done you like your yolks. don't forget to toast up the little insert! it's fantastic and festive =)

Eggs and Hot Dogs

For breakfast, I love putting an egg (or two) on top of a few hot dogs. Serving eggs with hot dogs is commonly done in Spain.

When you break the yolk, its golden goodness combines with the flavor of the hot dogs in the most amazing way!

Love all this recipe

Love all this recipe inspiration! I recently had a fantastic spinach salad topped with an egg and it was such warm deliciousness! And you know on Iron Chef it seems as if they're always topping things with quail eggs.

I love egg, you can pop them on top of virtually any thing. My favourite egg dish is eggs benedict. I love them.

I love doing this! Probably

I love doing this! Probably not super surprising since I have little egg factories in my backyard.

I was skeptical about this meal, Spicy Eggs in Adobo Sauce (http://tinyurl.com/bk4dmz) but it is SO good. Someone told me that this is a popular dish somewhere in South America--Brazil? I would like to know how the authentic version differs and what it's called. But I love it. And it contains another "hot" food item of years gone by, chipotles.

Want to be a Trend-Setter? Put an Egg on Top!

When Bon Appetit magazine predicted its Hottest Food Trends for 2009, I chuckled to see an "egg on top of anything" make the list. Trendy? Ha! Eggs are the frugal and healthful home cook's number one trick. Got eggs? You've got supper. No recipes required but for a little inspiration, let's check into some of the many foods that food bloggers are topping with eggs.

VEGETABLES
Field to Feast ~ North African Vegetable Stew with an Egg on Top
"It is so easy to put together – and so warming and flavorful – that you’ll start inventing many other vegetables sautés that could cushion an egg."

Spanish Recipes ~ Green Peas with Eggs and Bacon
"Give this one a chance, it's quick, simple and so nutritive. The ingredients are handy and cheap... who doesn't have eggs, frozen green peas and bacon in the fridge?"

Simply Cooking ~ The Incredible Breakfast Salad
"... this dish is not only super-easy to make at home, but it is just as delicious. It is substantial enough to serve as a light supper on its own, or perhaps as an accompaniment to a cup of soup."

Everybody Likes Sandwiches ~ Beet Greens with Fried Eggs
"The eggs were a good call, making the meal an ideal rustic home-style dinner that would work equally well for a brunch."

Last Night's Dinner ~ Braisin'
"... this was a big success – the leeks were sweet and meltingly tender, the crisp Prosciutto lent a nice textural contrast and welcome saltiness, and the yolk of the egg created a rich and silky dressing that brought it all together beautifully. Mike’s only complaint was that he would have liked more leeks, and I agree. I’m definitely going to make this again, and I’m looking forward to trying it with fennel, endive, and other vegetables."

PASTA
The Arugula Files ~ Linguine with Arugula & a Farm Fresh Egg
"My original plan was fresh linguine, arugula, garlic, lemon, and some parmesan reggiano. Boring! Adding a fried egg on top provides protein and makes the sauce creamy, a nice contrast to the salty parmesan."

Dishing Up Delights ~ Orzo with Bacon and a Fried Egg
"Do you ever have those days when you get home from work and are starving and have absolutely nothing in your refrigerator? No? ... I had just enough bacon, just a few eggs, and a box of orzo that I needed to finish. It came together quickly and was really satisfying."

Bitten ~ Spaghetti with Fried Eggs
"In this dish, sometimes known as 'poor man's spaghetti', you fry a couple of eggs in the olive oil after removing the garlic, which is not browned but 'blonded' ('imbiondito'), cooked lightly in good olive oil and then removed from it. Tossed with the pasta, the eggs and oil create a creamy, delicious sauce."

GRAINS
Closet Cooking ~ Sausage with Lentils and Greens
"The lentils turned out really well. They smelled great, were full of flavour, and I enjoyed their texture. ... the sausage ran out before the lentils and Swiss chard so I enjoyed the leftovers with a fried egg on top for breakfast."

PIZZA!
White on Rice Couple ~ Pizza alla Bismark
"... we took one of our homemade pizza crusts, sautéed up some thick-cut sweets onions, cracked a couple eggs on top, then glided it into a nice & hot oven. The results were scrumptious. The richness of the eggs were balanced nicely by the sweet onions, and the thin crisp crust was tasty as always."

RICE
101 Cookbooks ~ Poached Eggs Over Rice
"Today I'm going to share an unassuming little rice bowl recipe, something I throw together often for lunch. It's simply a reasonable serving of chard-flecked whole grain rice topped with a poached egg. ... it is one of those meals that fills you up without making you feel overly full, and I always feel great about an hour after I eat this."

TOAST
Home Cooking Rocks ~ Egg & Cheese Toast
"... the great thing about this toast is how the egg yolk oozes out."

TORTILLAS
Homesick Texan ~ West Texas Stacked Enchiladas
"... a fried egg on top. I don’t know how this tradition came about, but it’s a brilliant addition. When the yolk mixes with the sauce, its creamy transformation takes the sauce from merely delicious to truly decadent."

And you?
And you, how many years have you been a trend-setter by putting eggs on top? Leave a recipe or a link to a recipe in the comments!
