Agave and chocolate

I use organic agave nectar in my Tamarind Mango Buddha bonbons. It makes for a great texture (slightly chewy and tender) and it's not overly sweet. I actually use it a lot in my vegan line of chocolates.

Your picture of the grilled zucchini looks delicious. Grilling is one of the main reasons why I enjoy summer so much. However I must admit, I don't really know how to grill but that's what my boyfriend is for right?

I just read an interestng recipe about how you can actually grill a pizza on the grill. I think I might try that soon, or should I say have my boyfriend try that for me :).

Try this recipe!

Hi Kalyn,

I am a found lover of mac and cheese. It is probably the best comfort food around. I ran across this recipe for Spinach Mac & Cheese on the web site I work for, Recipe4Living.com. I am a food editor so I see a lot of recipes and this one got me interested. I made it the other night for my boyfriend and I and he basically ate it all up, I was left with just one serving. Oh well. Here you go:

Ingredients

2 C. dried pasta (any shape)
1 8-oz. container frozen, chopped spinach, drained
1 C. low-fat cottage cheese
2 Tbs. flour
1 C. skim milk
1 C. reduced-fat sharp shredded cheddar cheese
1-2 tsp. Molly McButter cheese powder
1/4 tsp. cayenne pepper
1 tsp. mustard
2 Tbs. Parmesan cheese (heaping)
2 Tbs. bread crumbs

Directions

Set the oven to 350. Cook the pasta, drain and set aside. In a medium bowl, add the spinach to the cottage cheese, mix and set aside. In a small bowl, whisk the flour and 1 C. milk. Add the remaining 1 C. milk to a medium saucepan and heat until tiny bubbles form on the sides. Whisk the flour into the hot milk and stir until it bubbles and thickens. Turn the heat way down and add the cheese, powdered cheese, cayenne pepper, and mustard. Turn off the heat and add the pasta to the cheese and mix thoroughly. Spray a 2 qt. casserole dish with cooking spray and pour the e pasta as the bottom layer. Add the spinach mixture, and lightly sprinkle with the Parmesan cheese. Add the remaining pasta and sprinkle with the remaining Parmesan cheese and breadcrumbs. Bake uncovered for 20 minutes and sprinkle with pepper before indulging.

Always Windy and Cold in Melbourne for the Cup

Hey there,

I just felt sorry for the lovely girl in the photo in her Melbourne Cup getup. It is always cold and windy and yikky in Melbourne for the cup and there she is in a hat that will only bring distress all day and a thin little dress over a skinny frame so she'd be miserably cold all day. Poor thing.

Watching the tv with the women struggle with fluffy hats and fascinators and shiver in inappropriate dresses yesterday we decided the wise and wonderful thing to do would be to have a beautiful coat made to match a charming dress with a hat inspired by the one worn by Princess Mary at her son's christening - it looked like it was both beautiful and practical in windy weather with its low profile (and no feathers). Then you could thoroughly enjoy the day without the miserable hassels of the others.

The girl in the photo looks lovely but I bet she had a difficult day in the typical Melbourne Cup weather.

I hope you won yesterday. I'm delighted that I backed each of the 3 winners (only for places but better than nothing) and hope you had fun too. After all, Melbourne Cup is meant to be about having a fun day. :)

Smiles
I only recently started running

and I love it. I love the feel, I love the solitude, I love the achy tiredness that sends me to sleep afterwards. ~sigh~ unfortunately, as working mom... my son can't keep up with me, and is too big to come along in the stroller, so, nights that I don't have him AND don't have errands to run are few and far between. The elliptical trainer just isn't the same (although it is marginally easier on my shins).

Women Running

INNside Innkeeping in Big Sky Country

Now this is a subject near and dear since I've been a long distance (ultras actually) and have found that running trails has been a great outlet, for thinking thru biz decisions, coming up with new ideas and otherwise "getting away from it all". Nowadays I spend more time running (or is that keeping after) our horses here. Now I 'm training more for endurance riding than running, but it's the same "ahhh feeling" when I'm done.

Even in the dead of winter , I 'll go out for even a short run (unless it's -20 and the wind's kicking. Whether it's a 15 minute run or a 5 hour run, nothing quite like it to get me going

Where the Levees Broke, Hope Prevailed

WASHINGTON--On August 21, 2006, Spike Lee's "When the Levees Broke" resteered emotion that has been present since Hurricane Katrina hit on August 29. From that the sea of despair, Postcards from Katrina rose to provide the opportunity to creatively express how hope still lies even among the sea of despair. Postcards, artwork and writings are posted frequently. Link TextTambra Stevenson, the creator, invites all people across the country to send homemade postcards to share their story of hope and help. Originally from Oklahoma, Link TextTambra has family in the Gulf region and had the chance to rebuild homes in the Gulf with her alma mater, Link TextTufts University, back in January 2006 in Gulfport, Mississippi. Since then she has been back to the area and New Orleans over the Spring and Summer. Visit Link Textwww.postcardsfromkatrina.com and send stories to Link Textpostcardsfromkatrina@gmail.com today!
