I read somewhere (maybe on The World's Healthiest Foods) that ounce for ounce, dark greens are the most healthful food of all.

The nutrition in greens is amazing

Since I have a huge veggie garden we eat huge amount of greens because it is there. What I have discovered is the nutritional value of veggies. I always thought that veggie were not filling. No, they indeed do not leave me with a full heavy feeling after a meal but it is amazing how they sustain me during the day. I honestly feel less hungry and in a need of an in between snack.
Hmm, is that what real food does?

I'm so glad you found this and told us more about your 90 Day salad challenge. And interesting to hear that you decided 30 days is enough time to adopt a goal. That's probably more do-able for many people.

Thank you for posting a link to my blog

I am the other 90 day salad blogger. Hillary and I were not aware of each other while we each pursued the 90 day salad challenge. My goal was slightly different from hers, in that I wanted to post an original recipe every day for the 90, to inspire people to do more cooking and to cultivate a relationship with their food. I "counted" chicken salads, potato salads, egg salads in my posting criterion.

Along with each salad recipe I posted an original short story. Writing the stories kept me motivated during my 90 day challenge as I felt I had something to express with each recipe that could be enhanced by using words.

The 90 day salad challenge is now over, and I have created a new blog. It is called "Leafy Reader". It is a collection of short stories with a produce inspired theme.

http://leafyreader.blogspot.com/

I found that by day 30 I had made salad a part of my life, and I still felt energized by my goal. I think that for those looking to take on a challenge to change their dietary patterns, 30 days is the perfect amount of time!

I think when you have really flavorful greens, you don't need much in the way of dressing!

Simple Salads are great!

With all the junk food and unhealthy food temptations out there, a simple green salad is my version of a "detox". I sprinkle lemon juice and EVOO on fresh arugula from my garden with tomato and cucumber also from the garden. Works every time to get me back on track.

I don't believe that fat is always bad

I personally think it's more important to choose the right kind of fat. Fat free and low fat dressings often have sugar, which I feel is worse for you than fat. I just choose dressing with olive oil or soybean oil and watch for the saturated fat.

It takes willpower to change your eating habits for the sake of health, especially if you've become addicted to sugar and junk food. My hat's off to Hillary. The salads in the pictures look and sound yummy. I'll be sending this link to my daughter because she loves trying new salads in the kitchen. My biggest challenge with salads is I can't do fat free dressings. Low fat is okay but fat free, no. And I know if you're not careful withe toppings and dressings, a salad can pack a wallop in calories.

She ate any other foods she wanted, but added a green salad to every days food intake. Her goal was to learn to like leafy greens and vegetables more, and she was successful at that goal.

Doubtful

I guess, if you are green-eater then you shall keep eating green. However, for people like me who practically live on a combination of green and meat, it woudl be extremely difficult to survive on green no matter what the quality adn quantity of the green is.

Just my 2 cents.

Kalyn,

When it's not summer, the teachers I work with all bring salad stuff all week. We keep lettuce on hand at school, and one day it's taco meat, one it's lunch meat, one day it's black olives with feta cheese and pepperoni, and then we have soup or sandwichs with it.

Salads can be so versitile, and very inexpensive. In this Texas heat it's also nice not to eat anything heavy or hot.

Alanna thanks for the recipes. They look great!

When I'm teaching school I take salad for lunch nearly every day. My usual is definitely Taco Salad, which works for me because we have a microwave in our teacher's lounge. My other standby is just lettuce, cucumbers, ranch dressing, and sunflower seeds. DO NOT skip the sunflower seeds. I think salad is perfect for lunch.
