I just made a beet and cabbage slaw I will post soon. Cabbage seems to show up in our CSA bag a lot, I've had to learn to cook with it, and just like greens, come to love it as a result!

Versatile Cabbage!

Cabbage is so versatile! It's great cooked in a stir-fry or raw for a salad. We find lots of uses for it.

My favorite cabbage salad (slaw) has peppers, cilantro, carrots, green onions, and an Asian vinaigrette flavored with ginger, lime, rice wine vinegar, soy sauce, and sesame oil, and a bit of brown sugar.

The whole time I was writing this I wondered why (it seems to me) there is so much increased interest in cabbage. Maybe it's the cruciferous vegetable thing? But it certainly seems to be the new mesclun, you're right about that!
