I've had similar experiences

One black bean burger I made a couple of years ago was such a horrible disaster that I do believe it is what turned me back toward the carnivorous life. However, certain people in my family like to tell me that those were the best burgers they've ever had.

Too bad I couldn't make them again since the original recipe was CRAP and I ended up doing... I'm not even sure.... to get them to patty form and then to the table.

Then, last week, TW attempted a veggie burger that our friend Elaine Magee wanted us to test for her new cookbook. Umm it tasted great but it wasn't burger like. Tofu sloppy joe without the tomato sauce. Or more closely related to an egg salad or something. Definitely not burgerlike though.

Why is it so easy to make a veggie burger from scratch that tastes good... but so impossible to make the actual burger/patty shape and texture???
