I've had success

This year I converted some old favorites into healthier cookie recipes. My version of healthy means more pure, using whole food ingredients. No bleached sugar or xylitol, no white flour. And it's been a great success. I think they are even better tasting than before! Why not try?

Homemade is better than commercial

I don't even try to Make them healthy. But I do like to bake them from scratch because I worry about trans fats and high fructose corn syrup in commercial cookies.

My favorite recipe right now is this recipe for Chewy Chocolate Chip Cookies.

This is just so wrong.

<rant>

On two counts.

There really is no such thing as a healthy cookie. Combine butter and flour and sugar and well, whatever you think, it's still a sweet something. You can use 'more healthful' ingredients, a little whole wheat here, a little fruit there. But the recipes you've linked to nearly all rely on faux ingredients like 'vegetable oil spread' (which will have 50 chemical ingredients) or rely on portion size to make them 'healthy' (which is a great idea, by the way) but truly, ingredient-wise are no healthier than anything else.

Why would we want there to be a healthy cookie? Eat your broccoli, have a salad, drink your milk, eat well overall and then sit down and savor a really good cookie, one made with real butter, in all its sweet goodness.

< / end rant>

PS Back to getting ready for my cookie swap, where for 12 years my friend Ann has attempted to bring 'healthy cookies' and year after year, they've been complete duds, so much so that our friend Jim, identifying Ann's cookies among all the others, tosses them in the dustbin, without a single taste. Now she brings red and green rice krispie bars -- a huge hit with kids and grown-ups alike.

Genius!

Mint sugar cookies? Genius! All they need to be topped with, IMO, is some kind of chocolate spread, like Nutella. :) Mmmmm.

Oh, and I have no problem passing on the walnuts too. I'm allergic.

They are the only sugar cookie I make and the only ones I eat. I'm making them today and the boy better like them. If not he's eating them anyway. I don't do the icing though. I use coloured sugar.

Now where are my cookie cutters....

The only "sugar cookie" recipe you will ever need

Since Sassymonkey has misplaced her copy of my recipe, I thought I'd share it here so more people can be converts to the magic of the mint sugar cookie. Trust me, these are excellent. (From the Christmas gifts of good taste book which I highly recommend for a zillion reasons.)

Cookies

3/4 cup butter or margarine softened
1/3 cup granulated sugar
1/3 cup firmly packed brown sugar
1 egg
1tsp mint extract
2 cups all purpose flour
3/4 tsp baking soda
1/3 cup finely ground walnuts (I leave these OUT.)

Icing (though most often we use tube colored icing to decorate)

5 cups confectioners sugar
1/2 cup plus 1tbsp milk
green, red, orange and blue paste food coloring

For cookies, cream butter and sugars in a large bowl until fluffy. Add egg and mint extract, beating until smooth. In another large bowl, sift together flour & baking soda. Stir flour mixter and nuts into creamed mixture, mixing until a soft dough forms. Cover & chill for an hour.

Preheat oven to 350. On a lightly floured surface, use a floured rolling pin to roll out dough to 1/4". (book has a pattern to make a Christmas light bulb and they are very pretty when you use this pattern - we tend to just bring the kids in to use normal holiday cookie cutters to make their shapes.) Bake 8-10 minutes or until cookies are light brown. Cool on a wire wrack.

For icing, beat sugar and milk in a large bowl until smooth. Divide icing evenly into 5 small bowls. Leaving one bowl white, tint remaining bowls green, red, orange, and blue. Spread icing on cookies and allow icing to harden. Store in airtight container.

Yield: about 2 dozen cookies

Pumpkin Recipes!!

Denise,

I love, love, LOVE pumpkin as well. I have been using it in everything - pumpkin and vanilla protein powder smoothies, chocolate (pumpkin) brownie cakes, pumpkin pie bars...oh I could go on and on. Many people do not realize the health benefits that pumpkin has to offer as well. I actually wrote a blog post on this topic back in September, when my addiction to pumpkin first started. Ha. If you are interested, you can check that out at:

You take over the reins! I'll happily relinquish the job to you. :-)

It really has been fun but I'm getting pumpkined out - except for my pumpkin pie craving, which I think will probably never go away.

Tonight, watching Survivor - they did a pan of the challenge course and it looked like they were going to have to stand inside of big pumpkins... it turned out to be circles which indicates to me that I should walk awayyyy from the pumpkins. :-)
