Dairy-Free Chicken & Avocado Panini

Simplicity. It sounds so simple, doesn't it? I've been trying to simplify my life for quite some time now, but haven't been serious about it until the new year. This means simplifying all aspects of my life - what I eat, what I wear, what I want, how I schedule my life, how I organize the things in my life, what is important and who is important. Basically my theory is the more simple I make my life the happier I will be in life. Less nonsense, less unnecessary, less crap, less expectations. Less equals more. Better health, more peace of mind, more positivity, more opportunities. I've been working to clear it all out and only let things into my life that are great experiences and make me feel at my best.

One way I find some sanity in all the static is eating simple foods that make me feel good at home - less time, less money, less fillers, less fuss. Like my Dairy-Free Chicken & Avocado Panini, for example. Takes only a few minutes to make, it's packed full of flavor and I have the opportunity to eat less dairy, feel good, and enjoy my meal with little work or stress. Let's not kid myself, on the weekends I enjoy planning out and cooking elaborate meals that require more of my energy and time, but during the week this is a great option that is quick and healthy, tastes great, and allows me to kick my feet up within minutes.

Ingredients: For 1 Panini
2 slices of bread (I used Udi's Gluten-Free Millet-Chia Bread)
2-3 slices oven roasted chicken
1/2 avocado
1 clove pressed garlic
A little salt
1 generous tbsp mayo

*You will need a panini maker or grill pan for this

Directions:

  • Combine and mash avocado, garlic and salt in a small bowl - taste and add more salt if you need it
  • Spread one slice of bread with avocado and then other with mayo
  • Top with chicken and close sandwich
  • Place on panini maker and cook until everything is nice and toasty
  • If I'm in the mood for some heat I drizzle a little sriracha sauce on top before I bite into it (optional)
