Now today’s salad is a twist on my favorite Mexican dish – a taco salad! Truth or Dare

See that gorgeous corn up there? That is from a can. A can of Del Monte® Whole Kernel Corn that was picked at the peak of ripeness and often canned that very same day. Not only are they gorgeous straight outta the can, but they are even better roasted. To make Roasted Corn, I drain and dry the corn softly with a paper towel. Then place the mostly dry corn on a piece of parchment on a cookie sheet....more
