I was definitely struck by the muse with tons of ideas for recipes that would take us out of our winter comfort zone, and eventually settled on a light bean and corn salad with peppers and tomatoes. It's fresh and makes a lovely lunch or a great side dish with shrimp tacos or beef tostadas....more

Who would refuse the tree-ripened, fresh, big, juicy, plump, and sweet peaches? Unless you are allergic to peaches, I haven't met anyone who wouldn't like peaches when served. Now today’s salad is a twist on my favorite Mexican dish – a taco salad! On a bed of crisp, romaine lettuce, this salad is loaded with crumbled chorizo, tomatoes, corn, beans, avocado, cilantro and a refreshing lime vinaigrette garnished with crunchy tortilla strips. See that gorgeous corn up there? That is from a can. A can of Del Monte® Whole Kernel Corn that was picked at the peak of ripeness and often canned that very same day. Not only are they gorgeous straight outta the can, but they are even better roasted. To make Roasted Corn, I drain and dry the corn softly with a paper towel. Then place the mostly dry corn on a piece of parchment on a cookie sheet....more
