Dinner in Five Minutes: Pesto Parmesan Gnocchi

Oh, how I love sharing a good recipe!

Well, at least I think this is a good one. The hubby and H approved of it, after I was grilled about how to pronounce “gnocchi” and if it was related to the Ukrainian perogie.

Just to clarify- gnocchi is Italian and you can find it in the pasta aisle. I would describe it as a mini Italian dumpling (without any filling). Because it is so dense, it really just needs a nice light sauce. The first time I cooked gnocchi I was in university. I slathered it with a jar of alfredo sauce (gross just thinking about it). I couldn’t stomach the stuff.

We’ve recently switched supermarkets and I kept seeing gnocchi in the aisle with the pasta. I decided to give it another go, but with a butter and pesto sauce. Amazing. Did I mention it cooks in about three minutes? Toss together a caesar salad and you have a “real meal” faster than picking up the phone and dialing take out!


Pesto Parmesan Gnocchi

Prep time: 5 minutes

2 c. uncooked gnocchi
1 tbsp. pesto suace
1 tsp. butter
1 tbsp. grated parmesan cheese

In a large saucepan bring water to a boil. Add gnocchi. Cook for about 3 minutes, until gnocchi rises and floats on top. Drain. Add gnocchi back in to the pot. Stir in pesto sauce and butter. Mix well until gnocchi is coated as desired. Sprinkle with parmesan cheese. Serve!

It really is as easy as that. I say… lay off the mac and cheese and give this gnocchi recipe a try!
