Dinner on the Table in 10 Minutes? No Problem!

It's such a cliched scenario that it makes me cringe a little to even bring it up, but it happens even to the best of us from time to time -- we find ourselves with a scant ten minutes to get dinner on the table for the family, and panic is setting in.

Modern family life tends to run at a frenetic pace. On any given day my modest family is navigating through both adults' full-time employment, two sets of homework, after-school activities, and doctors' appointments, and I would be lying if I told you dinner was always on the table without a fuss.

Fortunately, I've (so far!) been able to keep evening activities to a minimum, but even so, yes, there are days when I find myself with twenty minutes to get everyone fed and out the door. And that means ten minutes to make the meal, followed by ten minutes to squawk "chew faster!" I'm not proud.

On good days, I avoid panicking during those ten minutes because I've been an excellent planner earlier in the day or week. So when things are going well, I spend those ten minutes doing one of the following:

1) Defrosting something from the freezer.
2) Turning off the crock pot (which, natch, contains the meal I prepped before breakfast) and putting together a salad.
3) Throwing food on the grill or complimenting my husband on his ability to cook with fire like the manly man that he is.

On the not-so-good days, I don't panic, but dinner isn't really my finest moment. Ahem. In a pinch we generally have breakfast for dinner, as eggs are quick, easy and nutritious, and pancakes tend to be a crowd-pleaser.

On the completely discombobulated days, well, I wish I had a better plan. Fast food en route or "here, eat this cereal bar and we'll have dinner after [insert activity here]" doesn't happen too often, but I wish it never did.

Assuming you've not managed to pre-plan to where you have dinner ready to go in the crock or the freezer, but you have a relatively well-stocked fridge/pantry and ten minutes to get cooking, here's some sites to check out: The Kitchen Playground, Jason's Fit Kitchen, and Minnmoms.com all have entire categories dedicated to 10 Minute Meals.

Personally, I've got my eye on this stir fry from Home-Cooking Rocks!; while I'm fond of all of the ingredients as-is, the wonderful thing about stir-fry is how adaptable it is to whatever you have on hand (and it's quick, too).

My favorite fast dish is this:

Make rice using 1 Tbl. chicken bouillon per cup rice.
As it starts to boil, add frozen mixed vegetables. The bags I ALWAYS have in the freezer have: broccoli, cauliflower and carrots. Stir in a 1 Tbl soy sauce and 1 Tbl garlic powder per cup rice. At the last min. stir in a handful of roasted peanuts.

I could eat this everyday!

Wow I wish I thought of that before. Making it tires out the children...it sounds beautiful.

My tricks are to boil non-defrosted chicken with a solution of vinegar and then bake it with barbeque sauce. I also do spaghetti or the regrettable spaghettios...On a good weekend I'll cook a whole chicken and use it throughout the week, or just cook some fish. Ever tried tuna casserole?

there's one thing I ALWAYS keep in the cupboad for "just in case"

Stuff to make chili dogs. I make chili in huge batches with our garden veggies so it's not as horrible nutritionally as it sounds lol (+ whole wheat bread and quality turkey dogs)

The best thing about this meal is that my daughter makes it for us. She grates the cheese, nukes the chili and dogs, then assembles them.

Any parent who doesn't have their kids make chili dogs for the whole family is seriously missing out on 10 minutes of shower time/nap/brushing teeth/trying to find that BEEPING lost shoe time ;)

I also keep Gardenburgers in the freezer. We're 25 miles from the nearest fast food place, so we gotta make our own fast food lol

One of my resolutions this year really SHOULD be using my slow cooker more - such a good suggestion, Mir! I still have trouble finding the time to do the prep, but I'm getting more adept at toddler distraction.

I cook a lot of fish!

Most fresh fish only need salt & pepper and a little olive oil. Pop fillets in the broiler for 5-8 minutes and you're done! Easy, healthy, delicious everytime.

I'm normally really good at preparing our two week menu and sticking to it. Occasionally we can't get to the store on shopping day and all heck breaks lose that day. Here are our fallbacks:

1. Grilled cheese & tomato/vegetable soup.

2. Eggs/pancakes/french toast/omelettes

3. Spaghetti w/ marina sauce

Not much selection there which is why I really try to stick with my menus. But at least I have three (plus, with the multiple breakfasts) fallback plans!
