DIY All Natural Fruit Snacks

One of my son's favorite treats is fruit snacks. That can probably be said about many kids nowadays. I didn't want to take the delicious gummies away, but I was uncomfortable with the amount of sugar and nonsense there was in the ingredients. So, we made our own!
I've been hearing about the benefits of gelatine (it may not be spelled that way, but that's how it is on the Knox box, and I'm just fancy :-)) lately, and have been looking for ways to increase our intake. One of the main reasons for this is I have been hearing about the benefits on the digestive system, and Bubba needs as much natural help as he can get in that department. But more on the health benefits in another post. For now, we make delicious gummy treats!
This recipe is based off of the one on the back of the Knox box, but I changed it to add actual fruit. Although the juice we used is 100% juice, I like when I can get in actual whole fruit, and I also feel that it makes the fruit snacks more....fulfilling.
I used some of my prepped and frozen fruit for this recipe, and grabbed about 1 1/2 cups strawberries and 1/2 cup blueberries. Throw these into a little saucepan with 1 cup of 100% juice. We used apple, because it is a good, neutral base. I didn't want to overpower the berries any.
Heat on med until soft, and use a stick blender (if you want it smooth) to carefully blend mixture. Continue heating until boiling, stirring frequently. Be careful to pay attention to your saucepan! I got distracted and this happened....
Meanwhile, pour 1 cup of apple juice (or whatever 100% juice you are using) into a large bowl. Pour 4 Knox gelatine packets over the juice and let sit for a minute.
Remove the saucepan from the heat and pour into the bowl with the juice/gelatine. Whisk or stir together for a few minutes, until the gelatine is dissolved completely.
Pour into a large casserole dish (I think mine is slightly larger than 9x13 inches) that has been lightly greased with about 1 1/2 tsp coconut oil.
Cover with plastic wrap and place in the refrigerator to set. It didn't take us more than about an hour to set completely. After it does, you can use a sharp knife to cut the fruit snacks into small bite-sized pieces. They are so delicious! Hubby didn't want to touch it at first (his first name is processed food), but he warmed up after Bubba said he loved them. Turns out, he enjoys them too! Caught him sneaking some later in the afternoon :-)
The great thing about these is that there is no added sugar. We gave some to Hubby's mom to try, and she was very happy with the result. Just a heads up if you do have diabetes, although there is no added sugar or honey in these, they still contain the natural sugars in the fruit, so I wouldn't recommend overdoing it.
Having these all-natural fruit snacks on hand is really convenient for those long rides in the car or after school snack. I often find myself sneaking a few in the early afternoon!
