Easy Healthy Fast Foods for the Working Mom

Being a full time working mom of two little girls, ages 22 months and 4 months, doesn't allow me very much time to spend cooking up a storm in the kitchen (not that I would even if I could).

But in a dual effort to lose my baby weight and get my toddler to eat some veggies, I have been on the lookout for some good recipes. My critera - healthy, fast, cheap and easy.

Here are a few of my recent finds:


Cucumber Salad
(recipe from Pilleteri's in Birmingham, AL)


2 cucumbers peeled and sliced
Mix in a bowl with 1/4 cup white or wine vinegar
Sprinkle 1 tablespoon of greek seasoning (obviously the recipe calls for Pilleteri's seasoning which I recommend if you are in AL, but if not any good greek seasoning will do)
Refrigerate for 30 minutes to an hour and serve
*You can also add tomatoes or olives if desired 

Bake Sweet Potato Fries
(recipe from my Uncle Jim)

Take half way through baking. End result is much crispier.
Taken at the half way point. End results are much crispier. 

2 sweet potatoes peeled and sliced to 1/2 inch thickness 
Mix in a bowl with 1 tablespoon of EVOO
Sprinkle with Black Pepper to taste 
Sprinkle with sea salt if desired 
Bake at 475 for 15 minutes then flip fries and bake for another 10-15 depending on desired crispiness
