Easy Homemade Waffles

I recently bought my first waffle maker and love, love, love it!  I looked at a ton of different types but decided on this awesome little appliance:

It was a bargain from Amazon....and to be really honest, it's pretty fun to spin it over to cook the waffle.  My family was pretty excited about it too so we've had waffles several times already....and not always for breakfast either!  In the past I would have bought a premade mix that just needs a couple of things added but, looking at the ingredients in the packaged stuff, I knew that wasn't a good option anymore.  Waffles are super quick and easy to make and it's really easy to change up the recipe and make a different flavor.  You can even make extras and freeze them to just pop them in the toaster.  So this is my basic recipe for plain waffles....

Easy Waffles

Ingredients:

1 1/2 cup white whole wheat flour

1/2 teaspoon salt

2 teaspoons baking powder

2 eggs, beaten (or an egg-substitute for a vegan option)

1 cup almond milk

4 tablespoons coconut oil (melted if it's solid)

Directions:

Sift together flour, salt, and baking powder.  Add eggs, milk, and oil and beat until smooth.  Bake in a hot waffle iron until desired crispness.  Serve warm topped with your favorite waffle toppings.
