Eat Your Weeds - Dandelion Recipes

While flipping through The Yul Brynner Cookbook that Ma’am had given me (thanks again, Mamacita!) I saw a recipe for Dandelion Soup. Like anyone with a lawn, I immediately thought WEED Soup?! Sorry, I am not allowing any to hang around my yard long enough to find out. He also mentions young nettles can be used. Now those I have, so I tucked away the recipe in the chaos of my brain and forgot about until yesterday.
As I was exploring the locally grown offerings at Farmstead Market, I saw dandelion greens! I quickly grabbed a bunch. And then I did something I need to do more often. I stopped for a moment and asked the “produce guy”, Blaise, about them. He told me they are on the bitter end of the greens scale and that he likes to prepare them with some sauteed garlic and onions. The sweetness of the sauteed onions will balance the bitterness of the greens.
