Cake Pops.  Peaking in popularity, they are everything a girl with a sugar habit could ever want: cute, tiny, delicious balls of sugar and cuteness.

They are my enemy. 


Cake Pops. Bad news all around.  Tell your friends.



I made cake pops for a fund-raiser. 60 of them to be exact. I had seen my friend Sarah make them and they seemed really, really easy.

She did it with grace and style and ease. She was the Paula Deen of the Cake Pop World. It all looked so easy.

So, Friday my Mom and I dedicated ourselves to the production of 60 Cake Pops. Here is what no one tells you about cake pops - they cost a lot of money to make. We had to buy two cake mixes, two frostings, lollipop sticks, two Candy Melt bags, sprinkles and parchment paper. While it might not seem like a lot, the grand total came to about 30.00, and the purchasing was spread out at two different stores: Albertsons and Michael's. See, Wilton has a line of Cake Pop stuff. That's where you get the lollipop sticks, and the Candy Melts. The rest of the stuff has to be bought at a regular grocery store. I feel annoyed about this.



(By the way, I'm aware that people have much better and bigger problems than going to two stores. But I'm not comparing that to say, famine or unemployment. I'm comparing this experience to making a normal cake.)

We got home and started. First, we made the two batches of cake mix: One yellow and one chocolate. We baked said cakes (35 minutes), and then they had to cool for at least an hour. We relaxed and chatted on the couch.

Then we broke up the cake with our hands and with deftly wielded forks, turned them into tiny crumbles.

A tub of frosting was added: Lemon for the yellow cake, vanilla for the chocolate cake.

Then there was the rolling. The endless rolling. You grabbed a hunk of wet cake, and rolled it into a golf-ball sized er, ball. The problem is that as you are rolling them, the cake sticks to your hands. Suddenly your ball isn't a ball anymore. It's half the size it was when you started rolling. And now your hands are so sticky that you are incapable of rolling an even cake ball.



You are 31 years old and you can't even roll a cake ball. Might as well walk into traffic.


At least my cake balls were better than my Mom's; hers were misshapen and totally deformed, less a ball than a multi-angled giant monster. I had to re-roll hers.

Mom FAIL.

Then we had to put the cake balls into my freezer, which took more than a smile, because my freezer is wide enough to hold two ice-cube trays.

The cake balls needed to freeze for two hours. So we went and had lunch at the Bagel Bakery, which has the best sandwiches and the WORST customer service. I ordered a sandwich that came with chips and a drink for .99. The girl, smacking her gum, says to me "Yeah, thats not true anymore." "I'm sorry?" I say. "Yeah, now you get chips and a pickle." Me: "I hate pickles. Can I get the drink?" She rolls her eyes. I frown. "Well, it's on the sign. Maybe you should change the sign to be accurate." She gives a loud sigh and punches the cash register.

*Sigh*


Mom and I eat lunch and head back for the dreaded cake pops. Then my Mom TOTALLY ditches me. "I'm tired honey, and I don't want to drive in rush hour." she says, like this is a totally valid excuse for a 55 year old woman who works the most demanding job ever.



I let her go with a big hug and a "Make Mom Feel Guilty Face", and decide to tackle the Cake Pops alone.

I made cake balls, not pops. And oh wow what a pain in the ass it was. Never again. I'm totally with ya. In my house, cake pops are for eating only. Not making.

EPIC post! love all the pics too. you are a brave, brave woman to tackle the cake pops. i like eating cake more than messing around with it so will heed your advice and never make them. why make cake pops when brownies and ice cream are sooo freakin good? one bowl chocolately goodness.. excuse me, i'm drooling.

I used those candy melts to coat Oreos and pressed them into Halloween molds for a party a couple of years ago. The kids gobbled them up. The cute homemade pumpkin-chocolate chip cakes I created as the centerpiece of the party? They got a couple of nibbles, but most ended up in the trash. Sigh.

I love this...for me the only thing worse could be fondant...The Ace of Cakes possessed my home last year for a few months as we attempted to make a cake with polka dots (easy? not so much) and a bear cake mold with ready made fondant from williams sonoma...shoot me.

Oh dear you have just very perfectly described my first cake pop outting as well. I love it! We have tried them again and the second time was better, but Oye was outting # 1 a DISASTER. Thanks for the gigles.

I think you could make them cheaper. A generic brand cake mix is $1 and a Jiffy cake mix is less than $1. Prepared cake frosting can be found for $1.60 on sale. And those cake pop sticks are maybe at the most $4 for a bag of 100. I buy those every year at Christmas and make marshmallow pops which are even cheaper to make. I think the priciest thing on your list is the candy melts. I think for $15 I could make them.

Too funny! I tried to make the ones that looked like mini cupcakes on a stick. Holy cow. So much work for so little benefit. I like how cupcakes taste better.

Thanks for the laughs! I promise if you show up at my house with an old-fashioned "whole" cake or regular old cup-cakes, I will be more than happy. Sounds like cake pops should be banned! Fun post!

Screw that! I have never even thought of making them, but in my wildest dreams I would not have thought they were that hard! 60 balls over 6 hours... that's 10 balls per hour. Did you charge $10 per pop to at least make some money out of it????

Oof, the first time is always the worst. I refuse the buy the sticks, so I just make them as cake balls, but I never use the whole container of frosting because then yes, they are totally impossible to roll into balls. Most times I never use more than a half a tub of frosting. And then I put the rolled balls into the freezer for an hour before dipping them. As long as you don't put them in the freezer after dipping, they don't "sweat."

Also, I use Bakers dipping chocolate. It's not cheap but it has such a better chocolate flavor and you can get it at a lot of grocery stores!

What a great post! And by that I mean, great for us to read :D I saw some of the tips you've gotten in the comments and want to to offer a couple more, if you ever decide to make these again. I've made them a few times. I don't put a full batch of frosting in the cake all at once. I mix it in a bit at a time so the balls don't end up a big, goopy mess. Once I dip them, I put them upright in a block of styrofoam (I pre-poke holes with a lollipop stick). Also...white candy melts are useless. My friend and I were making cake pops a few weeks ago and wasted an hour trying to melt those things. All we got was a thick, blobby mess that destroyed the cake. So we went out and bought candy bark (just regular melting chocolate for strawberries or whatever) and it worked like a dream.

P.S. Feel free to ignore any of that if you decide to take up knitting instead ;)

LOL... I feel your pain!! I'm a HUGE Bakerella fan, and tried these out. The first time I cried, I swore, I vowed to never bake again. Someone might have thrown a shoe. Then in a moment of total delerium I decided to attempt it again a few months later. Second time was a dream... If you ever do have a moment of "They weren't that bad"... Tip 1 - Dip the stick in the melted candy before you put the ball on it. Then when you dip the ball... make sure you dip all the way up to the stick again so the stick is coated on the inside and out holding the ball on. AND Tip 2 - keep reapplying oil to your hands when you're rolling the balls. It makes them not stick to your hands. LOVE this post! You're hysterical!!

I had a very similar experience with cookie balls (cream cheese and oreos). I was crying by the end of the experience and might or might not have wished everything in the world dead.

Oh no! LOL Looks like a few steps were left out of the tutorial LOL First I totally recommend the Cake Pop Maker - in 4 minutes you have perfectly round little cake balls. They are lighter and fluffier than when you have to mix all that icing in (not to mention they have to be better for you not having so much sugar!) Also, you have to put the sticks in BEFORE you freeze - but putting a bit of melts on the tip and smooshing them in - then freeze all together so they dont come off the sticks. And I dont put mine upsidedown, cause I dont think there is any way to do that and NOT get the Finding Nemo Octopus.

A friend of mine forwarded this to me and I totally laughed. I make cakepops as a hobby business and the hardest part is convincing everyone that they are totally worth th $2 asking price I get for a cakepop. To make a batch (and, granted I HAVE all the necessary accoutrement) is very expensive and time consuming so I have to say THANK YOU for sharing your frustrations out loud. :) Everyone thinks it is easy and it is really, really, hard. It is truly a labor of love and it is a total creative otulest for me, so I enjoy it but believe me....all the things you are saying? I have experienced it as i have honed my cake-popping skill. A tip, though.....I don't freeze my pops. I chill them overnight in the fridge. If you freeze them, they expand as they thaw, thus cracking your chocolate. Good luck and keep up the great work. Ppractice makes perfect. Your next batch will go so much more smoothly.

Hahaha!!! I loved this post! I agree that cake pops are evil. I've been making wedding and occasion cakes for almost 12 years, so I have a ton of experience with cakes and decorating. About 6 months ago I decided to try making cake pops to see what all the fuss was about. O. M. G. What a nightmare!! I couldn't believe how *long* it took! And it was almost impossible to get them to stay round, blah, blah, blah. And at the end of the day (literally), I didn't like how they tasted, and I thought the texture was atrocious. What a waste. I was *so*, *SO* disappointed. Like, to my *soul* disappointed. I will *never* make them again. @Denise--I can totally see why you read this post three times, and giggled the whole time. I *love* the part about the cake ball rolling down the hall *:)*
