Here's a simple, quick, easy, and inexpensive dinner recipe for those nights you just don't feel like making something or spending the time making something to eat---English muffin pizzas. English muffins are a staple in our house. My husband loves to make a breakfast sandwich with them.
Why is this so easy and simple? Well, I didn't have to really do any prep work for these pizzas--only had to slice the artichokes & sun-dried tomatoes. At Publix, you can buy already chopped onions and bell peppers, a rotisserie chicken. Gotta love a small prep meal!
These are the perfect portion for a meal (one muffin is filling), and great for when you and your significant other like different types of pizzas or just want different pizzas. Your own personal pan pizzas; you can make any kind of pizza you like, savory or sweet. The hubs wanted three, so split one, which I will say was a little too much food for me. So like I said one whole muffin is perfect.
My husband loves the meaty pizzas, and I generally like the veggie pizzas or olive oil based pizzas or pesto based pizzas. However, I have converted him to the Mellow Mushroom's The Ceasar pizza...it's one of my all time favorites!
Oh did I mention this is a great way to eat pizza on a "diet". The English muffins we use are whole grain, only 120 calories, 23 grams of carbs, 2 grams of sugar.

The pizza I made was inspired by a pizza I had in Breckenridge, CO. It was a olive oil based pizza with chicken, garlic, sun-dried tomatoes, artichokes, spinach, mozzarella & feta cheeses. Chris' pizza was a marinara based pizza, with pepperoni, cheese, onion, and green bell peppers.
What are you favorite pizzas?
Chicken Artichoke Pizza: (this makes 3 small pizzas)
- 1-1/2 English muffins
- Extra-virgin Olive oil
- 1-2 tsp. garlic, minced (you can use garlic powder if it's easier)
- 3-4 artichoke pieces, sliced
- 2-3 sun-dried tomato pieces, sliced
- 1/2 a breast of rotisserie chicken, sliced
- Mozzarella cheese
- Feta cheese
- 4-6 baby spinach leaves, sliced
- Preheat oven to 350 degrees. Line pan with aluminum foil and spray with non-stick spray.
- Drizzle olive oil over muffins.
- Separate garlic and sprinkle/spread on each muffin.
- Add chicken, artichoke, sun-dried tomatoes, and both cheeses on top. Place pizzas on pan.
- Bake for 10-15 minutes, until cheese is melted and slightly golden brown.
