Not going to lie, I haven't always been a fan of eggs. I did egg whites for a long, long time, and I feel like I was still able to live a full and happy life. However, last year I started dating an 'egg enthusiast', and now they are pretty much a staple in my diet! I guess when someone you are close to loves something, you eventually learn to appreciate it as well. I can tell a difference in my energy and body when I start my day with a few eggs and toast! I just feel good. And yes, we almost always buy Egg-land's Best. :)

Eggs ... oh eggs.
Eggs are an important item in our house and it goes beyond omelettes and scrambled (though scrambled are my 1-year-old's favorite). We make everything from souffles to quiche to baked goods using them.
In fact, they are so important to our cooking that my three-year-old son knows to check the clear plastic egg container before we go to the store, to ensure that we have enough to make his beloved can-cakes (translation: pancakes).
As for me, my favorite is a poached egg over greens with a little vinaigrette. Mmm.
And, as a mom, I know that I am doing something good for my kids by starting their day off with an egg-based dish, since it's packed with protein and other goodness and will keep their bellies happy until lunchtime.

Yum Eggs
We love eggs... what a great source of protein in these times when we are trying to save a buck.
making an egg, scramled or poached with a slice of cheddar on top and whole grain toat is our fav way to prepare them. You can't beat eggs for a quick breakfast or lunch that is quick, easy, healthy, filling and I know we will be fuled for a few hours.
For Dinner I make omelets, Potatoe/egg baked strata and not to mention the baking I do with eggs.

Are the only eggs I will buy, and buy them I do. We use five dozen a week in my household, as one member is a bodybuilder who consumes a half-dozen a day. My personal preferred method is simply boiled, natures finest convenience food!

Eggs Are Crucial for my family
Breakfast, Lunch, Dinner, Desert. We need eggs for just about everything. I like that they are an eggsellent source of protein. My kids love them and so do I and my husband. What is breakfast without eggs? Incomplete. It's a "glue" that so many baked goods would not be without.
If I were allowed only one food item to eat

Nourishing the Body
Much of my job as a home-stay Mama consists of nourishing my children in various ways. Probably the most difficult, for me (because I was never specifically taught about nutrition), is feeding them well and making sure my little ones have the nutrients and PROTEIN they need to keep on growing UP.
Eggs make getting protein into their little bodies and even smaller tummies quite a bit easier. My girls LOVE eggs. If they could have scrambled eggs for breakfast, fried egg sandwhiches for lunch, and quiche for dinner, they would be in HEAVEN (figuratively, of course)! So, getting protein into my girls really isn't a problem because of EGGS. Thank heaven for EGGS!
An interesting bit of information about eggs my DH, who is an amazing Chef, shared with me is that the toque, a sort of tall hat that some chefs wear, is supposed to have 101 creases in it, which is supposed to represent the 101 ways eggs can be prepared. I believe those 101 ways refer to the preparation of the egg itself, not dishes mostly consisting of eggs. I could be mistaken on that point, but I'm pretty sure my memory holds true on this. Assuming I'm telling you right, is there any other food item that provides so very many opportunities for varied preparations? I think not. And again I raise my voice in praise, "Thank HEAVEN for eggs!"

Kicking-Up the Protein
My husband is diabetic, and his meal plan calls for protein with every meal and snack. We love eggs, so it's no problem to eat them often, but we usually toss half the yolks to reduce the cholesterol. Thanks for the generous offer!

Making an omelette with a lot of good veggies is great. Eggs are a very good source of protein and satisfies your hunger like no carbohydrate can.

I rarely eat meat or nuts so my protein is lacking. Eating eggs is not only a wonderful source of protein for me, but the flavor from a fresh egg is the best. I love to have my eggs easy-over, soft boiled or poached. This is a wonderful source of my daily needed nutrition. thank you
Substitute for Heavier Foods
Instead of eating a heavy meal at dinner, I sometimes have a couple of eggs instead. They're light, filling and much lower in calories. Plus, they're delicious and healthy for me as well.

Our family loves eating eggys as a great and healthy way to start our day. We usually have eggs for breakfast and even sometimes, we'll enjoy an egg for lunch or dinner. Eggs are an essential part of my diet. I'm an avid weightlifter and very conscious of my nutritional intake. For protein, additional omega's, and essential fats; eggs are a stable of my diet for both breakfast and prior to bed.
Love eggs
There is really no bad way to cook an egg, as far as I'm concerned, and we have eggs for dinner at least once a week because it's healthy, quick, and delicious. They're wonderful for breakfast, of course, but there is just something fun about having them for dinner.
I started using Eggland's Best eggs about six months ago when a friend swore they were markedly better than regular eggs. I was suspicious--I mean, how much better could one egg be than another, but my friend, as always, was right and we have been faithful since.

Being diabetic means many dietary changes have to occur. One of the small victories is that eggs are one of the few foods not taken away. They're high in protein, low in in saturated fat, no sugar and Eggland's Best is also low in cholesterol. After hearing everything you're not supposed to eat, it's nice to hear there's still at least one thing one can have that you really want to eat.

Eggs For Dinner
We love to have an omelet for dinner. I cook the eggs in the microwave to reduce the amount of oil or grease that one would have cooking in a normal fry pan on the stove. We add leftover vegetables to add some bulk. It makes a great quick and easy evening meal.

I eat an egg every morning for breakfast! It's the very best way I can start my day. Come to think of it, I need to go make my egg now...
Eggs a Family Tradition
Deviled eggs have been a tradition at all our family get-togethers for many years. My cousins & I would fight over the last one. Eggs mean family to me!
I make egg sandwiches for my husband every morning for him to take to work. Fried, scrambled, omelettes, boiled, deviled, baking, without eggs we would be in a world of hurt!

breakfast: a study of contrasts.
You know, mornings are hectic, the kids are running around telling me about projects that are due at the last minute, we're looking for jackets and shoes and library books. So brekky at our house during the week is cold cereal. Pop tart if Mom is in a giving mood. Too much hassle, too much fuss, not enough time to make a good sensible breakfast.
But, weekends are a different matter. I absolutely love making breakfast. I love making sausage or bacon, pancakes or crepes, french toast or cinnamon rolls, having OJ or chocolate milk, and piling huge stacks of food for my family to ingest. Always always always there will be some kind of egg with Saturday morning breakfast, whether it be scrambled, sunny side up, or an omlet. We like them with lots of cheese and green onions, some salt and pepper and a tad of salsa. Seals the deal.
Our favorites, though, are breakfast burritos with scrambled eggs inside. The protein of these meals fuels us throughout the day, and I only wish I was disciplined enough to get my bahookie out of bed earlier during the week, so we could partake of better nourishment Mon-Fri.
