Homemade bread seems to be a cornerstone of the DIY lifestyle, and who doesn’t love bread fresh from the oven? I know I do. But I hate kneading bread. Hate it! I’m not too crazy about the waiting-to-rise bit either. I cook every single day, sometimes spending inordinate amounts of time in the kitchen, caged in the pleasures of experimentation. A splash of this, oh no wait, a sprinkle of that. And yet there’s something about bread that really tries my patience.
Fortunately, this household comes with a resident baker (that would be Janne), but life has recently competed with bread, and our master baker has hung up his apron. The horror!
So, how to make bread without making bread? It turns out there’s something called no-knead bread. Perfect, I thought. There’s a lot of waiting involved, but at least the dastardly kneading part is cut out. Well, the recipes I found were either tedious or called for obscure kitchen gadgets, and after reading about the formidable Clotilde’s no-knead bread disasters, my interest waned (on that note, if you have successfully made no-knead bread, I want to hear from you).
When I happened upon Matthew Fort’s nutritious soda bread recipe, I knew it was the one. Soda bread, of course! Problem solved. This bread is hearty enough to eat on its own as a snack or for breakfast, but it’s also a great accompaniment to a meal. It’s fast and easy too—you’ll need barely three minutes to prepare the mix and pop it in the oven. I do hope our resident baker will one day return to his craft, but until then I’m very happy with this delicious loaf.

Auntie Mary’s super soda bread
2 ¼ cups plus 1 tsp buttermilk
3 cups whole wheat flour
3-4 Tbs sunflower seeds
2 Tbs sesame seeds
2 Tbs flaxseed
2 cups oats
1 tsp muscovado sugar
1 tsp salt
1 tsp baking soda
