How to Make Failproof Buns for Thanksgiving

Dread baking with yeast? That was me. I didn’t even want to try it! Then our first Thanksgiving as a married couple rolled around, and I was hosting turkey dinner. Oh, and I was pregnant. We had Nate’s parents, brother, aunt, my parents, sister and grandparents. And somehow… I got the grand idea to tackle baking fresh buns all at the same time. Good grief. Sometimes I’m sure I just live for the drama.

Anyways, you won’t believe it, but… they turned out! I remember being so excited and proud that the dough actually rose and didn’t flop. So really… if I can make them, you can too. Promise.

Side note: I initially found this recipe at my grandma’s house. She had it in her mom’s old recipe box. I’ve titled it “Great-Grandma Ruth’s Buns,” and put it in my own recipe box to pass it down to my kids. I think there’s a nice sense of tradition in that.


Ingredients:
2 tbsp. instant yeast
1 tsp. sugar
1/2 c. warm water

1/2 c. sugar
1/2 tsp. salt
7 c. flour
6 tbsp. oil
2 eggs
2 c. warm water

Directions:
1. Preheat oven to 350.
2. In a large measuring cup, measure 1/2 cup WARM water. Dissolve yeast and 1 tsp. of sugar in cup. Let stand 10 minutes.
3. In a large mixing bowl, mix dry ingredients together. Then add the oil, eggs, warm water and yeast mixture.
*Alternate the flour and water to achieve the right consistency. You do not want your dough sticky, yet you don’t want it dry either. When done it should no longer stick to the sides of the bowl.*
4. Spray a large bowl with cooking oil. Transfer dough. Knead about 10 times. Pat down then cover bowl. Let rise one hour.
5. Shape the buns. Spray hands with cooking oil, pinch off a golf ball size dollop and mould into a circle. Place on greased baking sheet and cover with lightweight kitchen towel. Let rise 1 hour.
6. Bake for 12-15 mins.
