Father's Day Shrimp Salad Recipes for my Shrimp-Loving Father

Shrimp CocktailToday is Father's Day in the U.S., and my family has already celebrated with a dinner for our dad on Thursday. For years, whenever I've asked my dad what he'd like me to bring for the Father's Day party, the answer has always been "shrimp salad." My dad loves shrimp salad, possibly above all other foods, so I thought it might be fun to celebrate Father's Day by spotlighting some delicious salads that use shrimp.

Shrimp is such a versatile food, and although it's relatively expensive for every-day meals, it's healthful and delicious for special occasions. Lydia from The Perfect Pantry has done a good job of explaining why frozen shrimp are the best choice for most people, and keeping a bag of shrimp in the freezer is a must at my house. Lydia's post also explains the system used to measure shrimp by number per pound (the lower the number, the larger the shrimp.)

Some cookbooks say you should always buy shrimp raw, but for things where the shrimp is served cold like my dad's favorite shrimp salad or the shrimp cocktail in the photo I've had good results using pre-cooked shrimp. However, when I'm using the shrimp in something hot I always like to start with raw shrimp. I like to thaw the shrimp overnight in the refrigerator when I can, or at least thaw them inside a plastic bag, because I don't like to risk rinsing away the flavorful juice.
