Faux "Fried" Shrimp

I love fried shrimp, but not the calories it can add on to my meal. So, this is a healthy alternative to one of my favorite entrees—baked in Panko!
1/4 to 1/3 lbs. of peeled, tails on shrimp per person
2 egg whites
Preheat oven to 375. In a small bowl, whisk together 2 egg whites. Also set aside a small plate covered in Panko.
Take your shrimp (as mentioned above I suggest anywhere from 1/4 to 1/3 of a lb. of shrimp per person, you can get your seafood guy to peel them leaving the tails on), a dip each one thoroughly in the egg whites and then the Panko. You might have to pat on the Panko even more if it isn’t sticking. Place shrimps on a cookie sheet on top of a baking sheet, bake for 12 minutes.
Serve with cocktail sauce and green beans.
Note: If you are a coconut fan (I am not), you can add shredded coconut to the Panko for added flavor.
