Fish Tacos, Watermelon Vodka Slushes, and a New Name

Good morning and happy Sunday, readers! 

Since today is Father's Day, I would like to begin this post by stating how wonderful my own Dad is. Without a doubt, he has been the most influential person in my life and is easily the first person I run to for advice when times are tough. I am one very blessed daughter to have been given such a fantastic Father. Although we cannot be together today, I look forward to spending time with him next week.

Today's second order of business is to discuss something you may already have noticed: A NAME CHANGE. This blog has undergone a name change after discovering several other blogs of similar name to The Housewife in Training. While it is now called The Mrs. with the Dishes, the content will not change and all of my readers can still expect delicious food and short anecdotes. For those of you who are unaware, this blog can be found on Facebook and Pinterest. No matter a name, can't all problems can be solved with an apple pie, some pearls, and a can-do attitude? I believe so.

Now, onto the last item of the day: Fish Tacos and Watermelon Vodka Slushes. It is a beautiful Sunday... the kind where family and friends should gather for a backyard picnic filled with laughter, good food, and sweet libations.

The Man and I have begun a new summer tradition of having the Brother over for supper every Thursday night. These meals have become some of my favorites because I have both of my boys at the table and each of them have fantastic appetites for my cooking. This past week, I served a Southwestern Summer meal of fish tacos, guacamole, and rice with beans and fresh corn. The Man and the Brother loved all three and ate with delight.

For this recipe, you'll need:

-Fish Tacos-

2 pounds mahi mahi filets, skin removed

1/4 cup vegetable oil

1 cup flour

3 tablespoons seasoned salt

1 cup sour cream

1/4 cup lime juice


-Watermelon Vodka Slushes-

3.5 cups seedless watermelon, cubed

1 cup vodka

2 cups ice

4 ounces simple syrup

2 tablespoons lemon juice

Begin by rinsing mahi with cold water and patting dry.



Remove the blood line from the fillets.

This gives the fish a metallic taste and is better to remove. My two little beggars are always present for fish slicing, in hopes of sharing the blood line as a delicious snack.

Slice fish into half inch cubes.


Toss with flour and seasoned salt.



Heat vegetable oil in a large pan on medium-high heat. Once hot, add mahi. Allow to cook 3 minutes and stir.



Cook 3 more minutes or until mahi has cooked through. Be careful not to overcook the fish.



I like to keep fish tacos simple. I don't add a lot of garnishes, because I believe the fish should be tasted. Often I make a simple sour cream and lime sauce for drizzling and give guests the option of using it on their meal. To make this, simply combine the sour cream and lime.



With tacos, it is easier to let guests assemble their own. Typically, I set this meal up "buffet style" so all tastes are met appropriately.




Meanwhile, make simple syrup by adding 2 ounces of sugar and 2 ounces of water to a small pan. Heat and stir continuously until dissolved. Let cool before mixing into slushes.



Add all ingredients for the slushes to a blender. Blend.



Pour into glasses and garnish with a lemon slice.



This meal is the perfect summer fix. It is easy to prepare and well liked by most people. The Man and the Brother spent the evening regaling me with tales of dating life and extreme amounts of snark. As I write this post, I have been reflecting on family and family through marriage. I am fortunate to have a wonderful father, father-in-law, brother, brother-in-law, and husband... all five men who make life so much happier.
