After enduring a crazy warm December, winter finally arrived in our little corner of Tennessee. I know many of my friends and family members enjoyed those freakishly warm December days, but not me. Good morning! While it will no longer be morning by the time this post is published, the draft began at 5:30 this morning after a cancelled boot camp class. I woke up at 4:30 and it was raining just a little bit. We've had class with a slight rain before, so I got dressed and sipped coffee while I waited for the "Class cancelled" text. It never came, so I left for the park. I waited until 5:05, and when no one else showed up, I assumed everyone hit snooze this morning....more
Low Carb Meatloaf
Some friends of mine recently welcomed a bundle of joy into their lives, and I signed up for a few nights of dinner duty. I figured the new parents needed something hearty to fill them up in these cold winter months, so I concocted a low carb version of meatloaf, a comfort food classic.

With the Superbowl coming up, I wanted to create an easy, keto-friendly dip you can bring to a party without anyone suspecting it's low carb, high fat.
