We've been asking food bloggers in the BlogHer network to share their favorite recipes.

Susan of Fat Free Vegan Kitchen

Susan Voisin writes the blog FatFree Vegan Kitchen, which has twice been voted most popular vegan blog by VegNews magazine’s readers. She sees her mission as to show the world that great recipes using fresh, whole foods don’t need added fat or animal products to taste delicious. Her food photography appeared in Nava Atlas' cookbook Vegan Express, and she is currently shooting another Atlas cookbook, Vegan Holiday Kitchen, due out next year.

Susan says, "Picking a favorite recipe is like trying to choose which child is your favorite! I love them all, but this one is perfect for this time of year." Try her pumpkin and black bean casserole and tell me how you like it!

but I adore FatFree Vegan Kitchen! Susan does a brilliant job on her blog. It's gorgeous, the recipes are terrific and the pictures make me want to take a bite out of my computer screen.

Everything contains some fat, and I don't have any problem with fat that is naturally in food, even high-fat foods like raw nuts and seeds, but there's no nutritional benefit to eating oils that have been processed out of food and stripped of all their nutrients but fat. If you eat a varied diet of whole foods, you'll get enough fat to absorb the nutrients in food without adding any oil. So when I say fat-free, what I really mean is low-fat or oil-free.

My understanding is that flavor isn't the whole issue, that we need a certain amount of fat to absorb the vitamins and nutrients from our food. What's your take on that?
