Black Bean Brownies

Some time ago I posted a recipe for Flourless Brownies containing pureed chickpea (garbanzo beans). So, I already knew this could work and didn’t hesitate at all to try to make Black Bean Brownies. They don’t contain any flour, so, I guess they could be called gluten-free (I’m not an gluten-free expert). They are also moist, fudgey, low-carb and high in protein and fiber. Baked Falafel Sandwich

Before I started making this Baked Falafel Sandwich recipe it was important to me to make them as healthful as I could.  Don’t get me wrong, I loved the deep fried falafel balls that I have eaten in restaurants.  It seemed that it should taste just as good when not fried.  I was right, the flavors are all there. To get that crispy fried taste just a little oil is added to the cookie sheet for the flat surfaces of the patties.For the dressing to go on the bread I chopped up some dill pickle and mixed it with tahini sauce, cayenne pepper and cumin.  Voila!  Delicious....more

Hot Pinto Bean Dip

Bean Dip seems to be an American go to when it comes to throwing a party. Everyone loves it and this one adds a little bit more – some spice.  It is spicy from chili powder and there is also some delicious creamy vegan cheese added so it seems more Mexican in flavor.  It is very easy and fast to make. Since it also keeps great in the fridge you can prepare it a couple of days before the party and you will have the dip covered.  If you are serving two dips you might want to go in a complete opposite direction and also make my Bell Pepper Bruschetta Dip.  They would really compliment each other....more

Homesick Vegan

Since I arrived in Florida on Tuesday, I’ve been busy settling in. It’s been hectic and not at the same time. Things could get overwhelming when simple trips to the gym or the grocery store were preceded by long walk in the bright Florida sun. But once my daily chores and training were done, there were plenty of down time that I spent in solitude. I did not realize going into the office daily meant I was surrounded by human connection. Homemade Vanilla Extract: The Conclusion

Oh Sweet Shower

Oh sweet shower. Some days I have to drag myself in to take a shower. It can be such a pain in the ass. The shower itself feels sooo good, but it's finding the time to do it that sucks. It's impossible to take a shower while my daughter is awake. Even if she is happily entertained with Sesame Street, there is no chance. I try to sneak into the bathroom to shower, but she comes in to peek behind the curtain and see what I'm doing within seconds.
