As is the case with many of my culinary creations, I took a stock of what I had in my fridge, and saw some big fat juicy peppers. I then thought those would be really good if I stuffed them with something. I didn't have any meat, so I thought of using beans as the main stuffing ingredient instead. But, they were too large to stuff with just beans, (that'd be a whole lot of beans for one serving), so I thought that I would mix the beans with some rice, and give it a Mexican flavor. Since it was an amazingly nice day outside, I would grill them. And so the creating begins...I will also detail some tasty variations.. such as adding bacon. There was a time when I could not fathom the reasons for canning beans at home. In their dry state beans are already shelf stable, after all. And they keep longer than their canned counterparts to boot. But then I had kids. Kids who grew to have friends and interests and extracurriculars and the propensity for making great messes. Kids who started to take upentirely too much of my time and mental capacity....more
I feel very fortunate to have grown up in the southwest Mexican foods like refried beans were in our family’s meal planning since the day I was born. It never occurred to me that everyone was not eating enchiladas and tortillas. I had a rude awakening when I moved to a small town in Georgia and there was not a tortilla anywhere or even a can of refried beans. Granted this was many years ago, but I rolled up my sleeves and taught myself how to make tortillas and refried beans. It was darn good, and in the words of my Georgia born mother-in-law, ‘If I do say so myself’.Now I have moved on from the original recipe and it turns out I have many different refried bean recipes. This one is one of my favorties and I like the way you can use the crock-pot for ease of meal preparation. Hope you can try it soon....more
