Creamy Cannellini Beans

The annual trip to Salento was going to be different this time. I was a newly fledged Vegan. No calamari or mozzarella for me. Could I do it? Actually yes I could! Any very easily. All the produce is so incredibly delicious in Salento with a heavy focus on vegetables. And the beans! So many beans. I have unapologetically consumed approximately 1,473 Pumpkin Spice Lattes in the past week. I’m beginning to turn orange and that’s just fine with me :) My brother and I have been sharing pictures back and forth of all things pumpkin. We’re pumpkin fanatics! We get very serious about our pumpkin consumption. If fact, we cannot consume our first Pumpkin Spice Latte until the weather is in the 60’s. Spicy Green Beans

This is a great way to dress up green beans but really it could be used on any veggie you’d like. I made this for Mike and his family and it was well received. So we have been watching a few matches and I have to say that I still don’t understand many of the rules….I however enjoyed myself thoroughly!!!...more

If you serve it with some fresh vegetables, it can be a great afternoon snack for the whole family. Black beans are full of proteins and fiber and also low in carbohydrates. That makes them a great dish for diabatics and everybody else on a low-carb diet. Bean dip is suitable for vegans and vegetarians alike. Unlike some of the other creations I've whipped up for this blog so far, this white bean dip is a dish I've been making for years and years.
