 Sometimes when you need a treat or you need a gift, a really good brownie is the perfect choice. And this brownie is excellent! The coffee and the good vanilla extract punch up the flavor of the chocolate without overpowering it. And a generous amount of pecans further balances the native brownie sweetness so that we achieve a really luscious confection.You need a really good chocolate for any kind of baking, but not necessarily the most expensive import for brownies. I would not be happy with the old supermarket standby, Baker’s, but maybe your supermarket carries Ghirardelli, and that will do fine. It has a strong, neutral flavor profile without any fruity or floral tones that would get lost anyway. Callebaut is always my favorite, delicious and reasonably priced. But use what you like.One of the workhorses of the American bakery is the 9” X 13” pan. It is perfect for brownies and other bars, plus crumb cakes and other coffee cakes, streusel-topped or not (even lasagna}. Most of the pans on the market have rounded corners and sloping sides, which always seemed really stupid to me. It guarantees that the outside servings have strange-looking sides. Trimming the sides will neaten them up (and guarantee some samples for the baker), but it seems a shame to sacrifice yield when it is not necessary. Just get a squared pan!Fortunately there is a company that manufactures perfect baking pans. They start with sheet aluminum, then cut, fold, and solder. Simple! The sides are straight, and the corners are perfectly square. The company is called Magic Line. You may not find it in your local cookware shop, but it is easy to locate online. Two-Bite Lemon Vanilla Bean Brownies
