Sweet and Sour Carrots

I wish I had more of a meal for you guys, but I honestly have so many leftovers again that I didn't want to cook a lot! Not to mention I was too busy today dress shopping to cook a full-fledged meal. (I found the dress!) Now when I was first making this recipe, I was highly doubtful on how it was going to taste… Don't judge a dish by it's pre-cooked stage I guess, because this turned out so good. The vinegar wasn't as strong as I thought it would be based on the smell. Mostly because it boiled out, and it's pretty amazing - seriously try this. ...more

Carrot Coriander Soup

Carrot soup with ginger and coconut milk

I have a thing for cute vegetables. For the bright and vibrant ones of course, but also for the uglier ones on the market. The dull-coloured, bumpy and lumpy ones, of which I almost feel they're a bit shy, quietly waiting for a customer to take them home. They almost had me feeling bad for taking home this bunch of wild ones....more

Carrots!

I usually go to the grocery store with a really detailed list -- all of the ingredients I need for all of the planned recipes with specific amounts.  We rarely deviate from the list and I'm not great at making up things to cook for the week on the fly.  But, every once in a while, we end up dropping by the store unexpectedly and I need to come up with something.  Often, we'll buy some kind of meat that looks good and I'll cook a vegetable that goes with it in olive oil.  Done.  The last time this happened, thoug...more

Chicken Noodle Soup with Roasted Garlic

I love eating chicken noodle soup in the winter or any time I'm feeling under the weather. Usually if I don't have a lot of time, I will make my quick version of chicken noodle soup, but the last time I made this soup, I had the time and energy to spruce it up a bit. I roasted my own chicken with some garlic cloves, which I added to the soup. I also used multicolored carrots and parsley to make it look colorful....more
