I'm convinced that portobello mushrooms are the perfect food for anyone who's limiting or avoiding meat. Of course that's a subjective opinion; I realize there are people who (gasp) don't like mushrooms. But if you're a mushroom fan, these Pinto-Stuffed Portobellos from Cate's World Kitchen must be an almost perfect Meatless Monday dinner. Cate sautees the beans with a poblano chili while the mushrooms bake and then combines them for a few more minutes in the oven. I'd cook these in my toaster oven so it didn't heat up the house, and I bet you could also cook them on the grill.
