Chicken Tetrazzini

This recipe comes from my mom who has been making this for my family for years. She got it out of an old Junior League cookbook but has since made some adjustments from the original recipe to create a creamier dish. When Jason and I arrived home from the hospital last week she made this for us, knowing it is one of my favorite meals that she makes. It's creamy and delicious and perfect after eating hospital food for almost a week....more

Eat In Your Pajamas: Baked Sweet and Sour Chicken with Fried Rice

Let's get two things out of the way about this dish right now:1. You do cook the chicken before baking. While pre-cooking adds time, it puts a nice coating on the chicken that grabs up the caramelized sauce. And it's still healthier than take out....more

Chicken, Potato, and Leek Potpie

Flat Roasted Chicken via Smitten Kitchen

Here is my first crack at a Smitten Kitchen recipe. I decided to try Deb’s Flat Roasted Chicken. In the book, Deb says she can have this on the table in an hour. I figured that meant, I could have it on the table in about an hour and a half (hey, I’m a slow cook, what can I say?). The most difficult part of the recipe was cutting the backbone out of the chicken.  I forgot that my kitchen shears are horrid and thus, cutting out the backbone was a display of my strength (seriously. it was work)....more
It really was delicious -- totally try it! Let me know how it goes!more

The Chicken Sandwich Goes Upscale, with Goat Cheese, Ciabatta, and Tapenade

The holidays are now behind us, but my mind keeps fondly wandering back to a couple of special homemade gifts that I received. One was a jar of homemade marinated olives from a dear friend that shares a passion for healthy, local, and sustainable food. Oh, how I wish I could’ve offered a few of these olives to you- they were so good! If I had to guess, they were marinated in olive oil, lemon zest, rosemary, and did I detect a hint of crushed red pepper? ...more
Thanks for the recipe! I just imported it to my @mealspring account and put it on the menu for ...more

Plated + Served: On The Twelvth Day of Christmas...

The Twelve Drummers Drumming needed only one thing: drumsticks!Mama was happy to oblige with an easy-to-make chicken drumstick casserole. My kids are nacho-fanatics, but everyone likes different toppings. I make the basic casserole and fill little bowls of jalapeños, sour cream, lime, chopped onions, cilantro and guacamole on the side so everyone can create their own enchantment. This is a deliciously easy way to end our celebration of the 12-Days of Christmas. Merry, merry, merry! Happy holidays everyone…...more

Chicken Vegetable Soup with Pasta

Dinner tonight was Chicken Noodle Soup.  The following is not an exact recipie, I'm afraid.  The idea was to use as much of the free stuff I had as possible.  Anything marked with an astrix (*) was from the food bank. Important thing to note about using freebies: learn to think technique, not recipies.  If you learn basic techniques and are not afraid to be creative, no matter what you have you can eat well.  Broth: 2 Large chicken breasts, bone in * Parsnip Carrot ...more
