Looking for a quick and easy meal idea for the work week? Here’s one that definitely falls under those two categories and one the whole family will love. Creamy Pork Loin & Vegetables Infused with Onion. Pork is a much healthier substitute for spare rib or bacon dishes and is a good meat to include in your regular meal plan. I always choose the pork loin because it is one of the leanest cuts of pork available. Pork is also a great meat for runners because it’s loaded with protein (about 22 grams per serving) with a low fat and calorie count. And it’s delicious…how can you go wrong?...more

My Dad lived alone for many years, and was very independent in his nature, which intensified as he aged. Eventually, we all lived together, yet he retain his independent habits for as long as he possibly could. He didn't like to be bothered by the physical constraints of life, such as eating, as it was inconvenient. He had places to go and things he wanted to do....more
Clearly we eat a lot of lamb up in this house. We're keepin' it real with a Mediterranean meal. Also? It's Athena's favorite food. I've had people ask me about cooking bone-in lamb so I thought I'd give a super easy recipe a whirl.
It's no secret that I adore my crock pot. The yummy goodness that it produces for me knows no bounds. In fact, I think crock pots are modern day witch's cauldrons. You throw any old thing in, (eye of newt, dead man's toe) and out comes a delicious meal. I started getting the cold-weather-blahs and they were punctuated by brewing child sickness, teething, and day to day scream-fests. This week I found this recipe for a pot roast done in a slow cooker. It looks really good and I like the fact that it has butternut squash as an ingredient. However, once I really read all of the directions, I saw that the recipe required more time than I was able to give. I was going to be gone all day, returning only in time to eat. I wouldn't be able to add the squash the last two hours, much less do all the simmering and whisking. So here's my version: ...more
I am so utterly sick of baking at this point. Some of you wonder why I named my blog "bipolar baking"--it's moments like this, when I'd really rather do anything other than bake. It's a love/hate thing. And, seriously, I baked 26 different kinds of goodies in less than 3 weeks.
...I'm sure two days from now, I'll be back to it.
So today, instead of whipping up confections or cookies, I've got a crock pot full of country bean soup while I police Thing 1 and Thing 2 as they take turns poking at the gifts under the tree.
When it gets cold, I want a warm meal to heat me through. And as many of you know, I do love my slow cooker. So yesterday when I was killing time at the grocery store, while waiting for tech support to figure out my cell phone issues next door, I got a pork roast on sale.So this morning, I sliced large gold potato's in quarters, and put them in my crock pot. I topped them with salt, pepper, 1/2 of a sliced onion, and my pork roast....more
