I love it when sweet and savory dishes start changing sides of the aisle, and the last few years that's been happening with Clafoutis. Originally a Clafoutis (also spelled Clafouti and pronounced kluh-foo-tee) was a French dessert using cherries or other stone fruit, but savory Clafoutis have been popping up the last few years. I was enchanted with this idea of a Spinach and Feta Clafoutis from Closet Cooking, and think it would make a great Meatless Monday dinner!
Even as I'm writing this, I know there are some of you who are very suspicious of eggplant (or aubergine, as it's called in Europe.) Besides the fact that it sounds so delicious, I think I'm partly featuring this recipe so I can tell you how I never liked eggplant until I finally tried grilled eggplant. Grilling brings out the flavor of eggplant in a way that no other cooking method does.
