Chicken Fettuccine Alfredo

In honor of our anniversary trip to Italy this week, I thought I would post some of our favorite Italian dishes. Chicken fettuccine alfredo is one of those staple Italian dishes. It's simple, but so so good. It's also much easier to make from scratch then you might think! Here's my version of this restaurant favorite:...more

The Cheesiest Chicken Fettuccine Alfredo Recipe (Parmesan + Romano)

I swear I'm 1/2 mouse. I love cheese so much! The main reason why I love eating Italian dishes is that it always, almost, comes with cheese. This fettuccine recipe that I'm sharing with you is perhaps the cheesiest there is---and probably also the most fattening. So, leave this for special occasions (like, you survived a Monday after the 4th of July weekend---this feat calls for a celebration!)...more

Ham and Peas Macaroni Alfredo

Avery, a two-year old in my day care, is the cutest little thing I have ever seen.  When her hair is in a ponytail, she looks just like “Boo”, the little girl from Monsters Inc.  Up until recently, Avery had been the youngest child in the group, but she inspired all of the older children to use their manners.  They applied it more frequently after seeing how she got praised for using hers.  Avery often says “thank you” when I change her diaper, when I hand her an item, when I serve her food.  In fact, when I fed her soup for lunch last week, she thanked me in ...more

Forget the diet! It's National Fettuccine Alfredo Day

Who would not want to celebrate at least once a year a wonderful plate of ribbon pasta cooked with butter and parmesan cheese? Like many foods we have grown to love, it is difficult to think of a world before it existed in our culinary lexicon.  Fettuccine had been around now for close to a century. Pastas were actually seldom served at American tables 100 years ago.  The age of mass production of foods and their distributions coincided with the discovery of Italian foods. The rest is history....more

Sunday Vino for Fettuccine Alfredo (Fettuccine Triplo Burro)

Wine Pairings for Fettuccine Alfredo (Fettuccine Triplo Burro) White Wine: Chardonnay, especially from St. Michael-Eppan “Sanct Valentin” from Alto Adige and Planeta from Sicily Fettuccine Alfredo is an American favorite just like Chardonnay. The bond between this dish and this wine is the underlying buttery character of the dish that is commonly found in Chardonnay-based wines....more

Sunday Pasta: Fettuccine Alfredo (Fettuccine Triplo Burro)

Ok. There are few lessons buried in this recipe, which is probably the most common and the most bastardized of all pasta dishes in America. First, despite the Italian Facebook page dedicated to the non-existence of Fettuccine Alfredo in Italy, I’ve eaten it there at Alfredo, on Piazza Augusto Imperatore, in Rome. And it was good. That said, “which came first the tourists or the Fettuccine Alfredo?” is a fair question....more

Low Carb Fettuccine Alfredo with Chicken

Well, I figured since my tuna noodle casserole is so popular that I would add my low carb fettuccine alfredo recipe.  It is delicious.  After all, the only thing that separates it from traditional fettuccine alfredo is the carbs from the normal pasta.   ...more
