I'm one of those people who loves butternut squash, so as soon as it's cooler weather anything with this creamy variety of winter squash appeals to me. Besides the butternut love, this tasty-looking risotto from Eats Well with Others has barley and kale, two more of my favorite comfort food ingredients.
