When I was a kid, I loved it when mom made pancakes or french toast for dinner, and if you have kids who are eagerly looking forward to Halloween, I think Pumpkin Waffles or Pumpkin Pancakes would be a perfect Meatless Monday dinner on Halloween week. In most of the northern hemisphere, the weather is really heating up. Cold noodle dishes are one of my favorite things to eat when it's steamy hot outside, and these Sesame Noodles from Jeanette's Healthy Living have black soy sauce, sesame oil, and sesame seeds, plus just the right amount of thinly sliced vegetables.
Jeanette Chen from Jeanette's Healthy Living was recently featured in her local news for a series of soup classes she taught at her local senior community center. The idea for this soup series came from an article she came across last summer called The Kids Are All Right, But What About The Elderly?, which stated that as people age -- even if they were once good cooks -- they often stop cooking and turn to convenience foods, usually processed or canned.
