Pumpkin Waffles or Pancakes for a Halloween Week Meatless Monday Dinner!

When I was a kid, I loved it when mom made pancakes or french toast for dinner, and if you have kids who are eagerly looking forward to Halloween, I think Pumpkin Waffles or Pumpkin Pancakes would be a perfect Meatless Monday dinner on Halloween week. (And if you don't get them made for Meatless Monday, they'd definitely be a hit for breakfast on Halloween.) Jeanette Chen from Jeanette's Healthy Living was recently featured in her local news for a series of soup classes she taught at her local senior community center. The idea for this soup series came from an article she came across last summer called The Kids Are All Right, But What About The Elderly?, which stated that as people age -- even if they were once good cooks -- they often stop cooking and turn to convenience foods, usually processed or canned. The most rewarding part of teaching these classes for her was when one of the women told her that the classes helped get her through a long winter....more
