Light Tomato Basil Quiche from Kitchen Parade

Every year in early September my garden reminds me to take advantage of the last days of summer by producing huge amounts of tomatoes and basil, and this Light Tomato Basil Quiche from Kitchen Parade looks like a perfect recipe to take advantage to the last days of summer. Alanna has made this a little lighter than some quiche recipes by using low-fat mozzarella, evaporated skim milk, and just enough eggs to hold it together. Looks like a perfect Meatless Monday dinner to me! ...more

Cauliflower Crust Vegetarian Pizza from Kalyn's Kitchen

I admit that I was more than a tiny bit skeptical when I started hearing about pizza crust made from cooked cauliflower, cheese, and egg, but when my nephew Jake and I tried this, we were impressed even with our first try. It did take us a couple of experiments to settle on the recipe with almond flour and Parmesan that we thought was a keeper. We used mushrooms and olives that time, and gobbled this up for a Meatless Monday lunch. Even if you don't care about pizza that's gluten-free or low-carb, this is really delicious. ...more

Greek Frittata with Zucchini, Tomatoes, Feta, and Herbs from Kalyn's Kitchen

After I made this Greek Frittata with Zucchini, Tomatoes, Feta, and Herbs, I noticed I was eating the leftovers for breakfast, lunch, and dinner. That launched the idea in my mind that frittatas, which are a type of omelet that's not folded over, might be a perfect Meatless Monday dish. I love the combination of tomatoes and feta in this recipe, but if you're not a fan of salty Greek feta cheese, mozzarella would make a nice substitute. ...more

Summer Squash Fritters from Aggie's Kitchen

Nothing says summer like zucchini, and if you know someone with a garden they'll probably be happy to share some so you can make these very tasty-looking Summer Squash Fritters from Aggie's Kitchen.  The fritters have Parmesan cheese for extra flavor, and I think they sound like a perfect Meatless Monday lunch or light dinner, maybe with a nice green salad on the side and some kind of tasty sauce to serve over them.  Aggie uses a combination of yellow summer squash and zucchini, which I think makes the fritters especially pretty, but any kind of summer squash would work. ...more

Pinto-Stuffed Portobellos from Cate's World Kitchen

I'm convinced that portobello mushrooms are the perfect food for anyone who's limiting or avoiding meat. Of course that's a subjective opinion; I realize there are people who (gasp) don't like mushrooms. But if you're a mushroom fan, these Pinto-Stuffed Portobellos from Cate's World Kitchen must be an almost perfect Meatless Monday dinner. Cate sautees the beans with a poblano chili while the mushrooms bake and then combines them for a few more minutes in the oven. I'd cook these in my toaster oven so it didn't heat up the house, and I bet you could also cook them on the grill. ...more
@JennaHatfield I totally agree. And it's a good way to use the pinto beans I make all the time!more
