Omurice (Omelette Rice)

Omurice is a popular contemporary Japanese fusion creation blending Western omelette and Japanese fried rice. It’s usually enjoyed at home but also can be found at many Western food diners in Japan. When there is leftover rice, it’s a perfect single plate meal to prepare the next day.The rice is usually pan-fried with ketchup and chicken, then wrapped in a thin sheet of egg omelette. From preparation to completion only takes a quick 20 minutes. It’s one of my children’s favorite meals with fried rice, eggs, and lots of ketchup....more

Grilled Vegetable Fajitas

Leftovers tend to go very fast in my house, unless, of course, those leftovers are vegetables. It seems like there's always a bowl of grilled (or roasted, in winter) vegetables hanging out in my fridge. I could come up with a million and one uses for them -- omelets, salads, wraps -- but my boys are a whole lot pickier. I have to "hide" the veggies in their favorite foods to get their approval and these fajitas are perfect for that!...more

Stuffed Crêpes

I do love making enough food to have leftovers. However, I lose interest in eating the same leftovers more than perhaps twice, so I try to find new ways to jazz my leftovers up and make a different meal out of them. All of this leftover talk brings me to one of my most favorite "leftover makeover" dishes from my childhood. My grandmother used to always make traditional Persian dishes for lunch. For dinner, she always made lighter dishes which did not involve rice....more

Grilled Steak Bruschetta

I don't know about you, but there are a few specific things I look forward to every summer. Sure there is the sun, warm weather, blue skies, picnics, family vacations, and swimming. But you know me. I'm all about food, so it's no surprise that it's the main thing that I look forward to this season. You see, I look forward to summer because I love grilled foods. I dream about perfectly sun-ripened tomatoes, and I adore sweet, sweet basil. This quick and easy appetizer combines all three....more

Leftover Potatoes to Tots

Please don't tell me I'm the only one. You have a fridge full of groceries, and a full pantry. Your husband casually goes over to the fridge to look for something to snack on."We don't have anything to eat," he says. I can't tell you how many times I have heard this. And let me tell you - with the amount of cooking I do, there is always food in the fridge and pantry. In fact, they are usually so full that it's hard to fit anything new. So really, it's not a lack of food. My husband just doesn't like leftovers....more

Roast Chicken Soft Tacos with Cilantro Cream

Our favorite Sunday activity in the fall doesn't have anything to do with tailgating and pigskins. Instead, it has everything to do with cranking up the oven and slow roasting a plump whole chicken stuffed with herbovacious goodies. And even though it's now only early August, I am totally craving cozy sweaters and roast chickens. So lucky for me, our local grocery store sells rotisserie chickens all year-round for just $5 on Fridays. Five bucks! You can't even buy a whole raw chicken for five bucks and we don't have to heat up the kitchen for a quick dinner!...more

Walleye and Rice Cakes

One of my "fridge struggles" is finding something to do with leftover food, especially with common leftover items like rice and pasta. The other night I had two items on hand: leftover wild ancient grain rice, and fresh walleye from a fishing trip with my dad.So off to the kitchen I went, and concocted this recipe. It was a crowd pleaser even for the most difficult to impress -- like our dad, who calls everything we make "hippie food." Even he loved these cakes....more

Sweet Corn Ice Cream and Eight More Ways to Use Leftover Corn on the Cob

We've eaten a lot of corn on the cob lately. Grilled corn on the cob. (I never thought I would say that.)...more
