Brown-Sugar & Cinnamon Preserved Ponderosa Lemons

The condiment “preserved lemon”—lemons brined (or pickled) in salt and spices, and then allowed to ferment/ripen for many weeks (or months)—is widely used in Moroccan, Indian and North Africa cuisine.
