I just have two things to say about this great meatless pasta dish that I came up with one day when I had some leftover arugula but didn't feel like a salad. Baby arugula and sweet potatoes. If you like those two ingredients, you're going to love this recipe, (and if you don't like them, there's probably no way I could talk you into trying it). If you replace the Parmesan with a vegan cheese, the recipe could be vegan, and there's so much good flavor here, I think it would even be good without the cheese....more

It's count-down-to-the-Superbowl week, so I'm guessing a lot of people are on the hunt for the perfect chili recipe for the big game. Doesn't chili and the Superbowl just automatically go together? Did you know there are two holidays today? Of course everyone knows it's Martin Luther King Day in the U.S., but you might not know that it's International Hot and Spicy Food Day. As soon as I heard that I thought it would be fun to find something that was unexpectedly spicy for Meatless Monday. What I wanted was a hot and spicy recipe for a dish that's not normally hot and spicy, and Spicy Cauliflower Soup from A Veggie Venture fits that description perfectly. Most cauliflower soups are rich and creamy but this one is healthful and deliciously spiced with coriander, cumin, chili powder, and turmeric in addition to the red pepper flakes. Alanna says the inspiring recipe suggests you could eat it with a dollop of plain yogurt, and I'd definitely want that on mine to cool down the heat....more

Slow Cooker Vegan Sweet Potato Chili from A Year of Slow Cooking

For a week or so I've been wondering what would be the perfect meatless recipe to start the new year. Then I realized that the first Monday of the year is also the first Monday back to work for many people who've been enjoying the holidays.
